    The snail is de-shelled first then the slime is removed using lime or lemon juice before boiling. That's how it's done in Ghana.

      ​@@YSYapI cant see why not. The snail itself isnt poisonous, it just harbours lungworm, as do many snails ams slugs. Just make sure you cook it well if you forage them, or buy it from the shops where its lungworm free.

    In Indonesia, snails are called "bekicot". Don't use salt after boiling it, to remove slime/mucus we usually use tamarin water or vinegar or alkaline water for ramen noodles or if not available you can use baking soda. Then rinse with clean water before cooking. You can look for " Masakan Bekicot " as inspiration for how to prepare these snails the Indonesian way.

    Some additional info:
    -All land snails and slugs can carry rat lungworm.
    -Rat lungworm can be contracted through contaminated produce. Vegetables that have had slugs/snails crawling on it are safest well cooked.
    -Rat Lungworm is killed by thorough cooking. Masaru should be safe.
    -It’s not inherently dangerous to touch the snails. The danger is when traces of mucus are transferred from the hands to the mouth. Always wash your hands well after handling snails.

    I'm from Botswana and these things emerge after it has rained. This December we had showers and you see these snails crawling about. Many end up roadkill.
    It's not a pretty sight when it happens.

    台灣很多 ! 而且只有專門料理的人會處理..
    畢竟剛抓的時候,身體殘留著土腥味,需要清水靜置天天換水過濾掉身體異味及腸胃雜質 ..
    可以使用小蘇打+鹽去除黏稠液體
    吃也只吃頭足部分 , 它腸胃不宜食用

    In Indonesia we also eat this kind of snails, usually we grill it with sweet sauce (skewer) or sauté with alot of indonesia spices orrr just boiled with kinda simple ingredient like garlic, onion, nutmeg, chili, turmeric
    Oh and there's also snail from ricefield, its smaller and the shell is almost all black, i love this one even though its small it's delicious 👍😅

    アフリカマイマイの下処理ほんとに大変でした!
    台湾にも「塔香螺肉」と言うアフリカマイマイのお酒に合う料理があります
    処理済みのマイマイ肉が生姜、ねぎ、にんにくと大火炒め、唐辛子とコショウと沙茶醤と醤油が調味して最後にバジルを入れて少々炒め
    もし参考できるならよかったです。

    For your information, this snail also lives in Indonesia. We boil it for a very long time until the slime disappears so that when we remove the meat from the shell it is clean without slime. then we sauté it with seasoning and it becomes a delicious meal. These snails are our daily food and honestly I just found out that these snails are poisonous, we always touch and eat them carelessly hahaha

    Masaru, in the realm of exotic foods, you pretty much blow even Sonny out of the water. You've gone above and beyond exotic to experimental. LOL! Although I won't be surprised if locals actually do eat those snails. Many cultures around the world eat various types of snails including mine. I've never heard of anyone eating the eggs though. I really do hope you don't get hurt from this. I am also curious though if Japanese cuisine does include preparations for your local snail species excluding sea snails and such but just the land snails.

    We love snails in Portugal, both grilled (big ones) or sort of stewed with oregano, it smells delicious. Usually they are cooked alive, you should purge them first if caught outside, but store bought are usually pre-purged, and the little ones are less slimy

    茹でてたのは記憶にありますが細かい調理法は覚えていません、母に聞けばっ解るかもね?

      You can make jerky at home with any kind of meat easily! Tuna jerky is good with a mixture of soy sauce, rice wine vinegar, orange juice, garlic and brown sugar. Take thawed meat and put it in the freezer for 1 hour to make it firm then cut it into thin strips and put it in a dehydrator or oven at 150F/65.5C for 8 hours. Fishies should be stored in the fridge for extra safety. It keeps for a couple of months in the fridge and a couple of weeks unrefrigerated. Up to 2 years if you vacuum seal it!

    We call these snail “siput babi”. They often eat crops and we used to put salt on them to kill them but obviously i don’t think we eat them in my country 😅

    There were tons of these guys at Camp Foster. On morning runs the baby snails would be crawling around on the sidewalks, leading to a lot of inevitable crunching... I've definitely seen a few utterly massive ones crawling around the wet grass.

    I always thought snails for escargot are fed a special diet, for instance lettuce, for a few days to "clean them out..."
    I've never had escargot but heard it tastes like snot, so I don't think I'm missing anything...

    Generally speaking, people in my country don't eat snails. But I've heard people who eat it say that the way to remove the slime is to dry it on a charcoal grill.

    This was very entertaining and educational. My grandma always made snails for me to eat when I was a kid. Not these poisonous ones however.

    if you still feel a lot of mucus.
    maybe you didn't boil it enough with water.
    Usually after the process it is cleaned with salt.
    Boil several times until the mucus reduces. (don't eat snail eggs, because they are usually poisonous. especially if the eggs are pink)
