  • A traditional Turkish flatbread made with yeast, known for its soft, fluffy texture and its nigella and sesame seed topping. This delicious bread is commonly eaten as part of a breakfast along with Feta cheese, olive oil, meats, tomatoes and greens. It is also delicious as an accompaniment to soups and stews.
    INGREDIENTS:
    1½ cups all purpose flour
    1 cup whole wheat flour
    ½ teaspoon salt
    1 egg (white & yolk separated)h
    2 tablespoons olive oil
    ½ cup warm water
    ½ cup warm milk
    1 teaspoon sugar
    1 teaspoon dry yeast OR ¾ teaspoon instant yeast
    1 tablespoon plain yogurt
    1 teaspoon water
    1 teaspoon white sesame seeds
    1 teaspoon nigella seeds (kalonji) OR ½ teaspoon zatar
    DESCRIPTION:
    1. Combine together the warm water, warm milk, sugar, and yeast in a large bowl. Mix well and leave for 10 minutes to allow the yeast to activate.
    2. In a separate large bowl, sift and combine the flour and salt. Add in the yeast mixture, olive oil and the egg white. Mix until a dough is formed. It should be slightly sticky, flour your hands and knead gently into a ball shape.
    3. Cover the bowl with a kitchen towel and leave in a warm room for 40 minutes. The dough will double in size during the first rising. If the room is cooler, it may take a little longer.
    4. Add a dusting of flour onto a parchment lined baking tray. Transfer the dough onto the tray and without kneading too much, shape the dough into a round. Cover with a kitchen towel and leave for 20 minutes for the second rising.
    5. Preheat the oven to 400°F (200°C)
    6. Whisk together the egg yolk, a little water, and the yogurt to make the eggwash.
    7. After the dough has rested and the second rising is complete, flatten the dough gently and brush the surface with eggwash. To create the classic pide pattern, use a knife to press in a circle of approximately 1-inch from the outside edges of the dough round. Then using the index finger create a crisscross pattern inside the circle. Sprinkle with sesame seeds and nigella seeds (or zatar)
    8. Bake for approximately 20 minutes until the bread is a rich golden color.
    9. Move onto a cooling rack.
