hate to be "that guy" but if you (or rather the owner) are ripping out all the things that make it a mach-1 428 cobra jet why not start with something less special? after it's all done all that "r-code" jazz will be meaningless except that there will be one less original car in the world.
That is a good idea, and you could definitely do that with your car, but it looks like this owner has a dream and a plan for his car. as for the shop, they are usually just there to make the owners dream become a reality. there may only be a few of these exact cars left or ever built, but there are a lots of rare cars in this world and all should be built in to what the owners vision is, so they will be enjoyed.
