You need the mirrors fold from the switch. If you don't have a position marked on the driver's window switch, you cannot do this. If the mirrors cannot be fold from the switch it implies to change the mirrors and the doors control units.
The steps are in the description of video. You need a VCDS interface and most important you need that the mirrors to fold from the switch. If you don't have a position marked on the driver's window switch, you cannot do this.
