The need for rice depends on which society hail from. My middle classes think that rice is essential to enjoy Filipino food. But for rich Filipinos rice is not a necessity.

adobo has close to 100 variations. The best adobo has chocolate chips and the adobo with condensed milk and blue berry jam.

Just remember all Filipino food is eaten with rice it balances the rich flavor of the main dish. If you eat desert you don’t need rice with it.
