  • Dive into the heart of North America with Thomas Lengrand, sous chef at Hunter's Grill. In this last episode of "Totalement Toqués" season 2, Thomas gives us his tips for making "Maple syrup glazed salmon", a tasty dish that blends land and sea.
    The Hunter's Grill restaurant at Disney Sequoia Lodge offers visitors an all-you-can-eat buffet of gourmet, comforting dishes inspired by the Great American North.
    THE RECIPE:
    The ingredients (Serves 4):
    • 4 salmon steaks (160 g each)
    • 200 g carrots
    • 200 g yellow carrots
    • 300 g small potatoas
    • 200 g turnips
    • 200 g butter
    • 150 g maple syrup
    • 150 g honey
    • 50 cl sherry vinegar
    • 100 g veal jus
    • 1 l water
    • Garlic
    • Rosemary
    • Salt
    • Pepper
    • Olive oil
    Procedure:
    • Once washed, peel and chop the vegetables
    • Add the butter, the rosemary and the olive oil
    • Roast at 180°C for 20 minutes
    • In a pan of hot oil, brown the salmon with maple syrup
    • Finish cooking over a low heat on the flesh side
    (Tips : If you don’t like salmon, you can choose another fish!)
    • Pour the honey, vinegar and maple syrup into a saucepan
    • Thicken the sauce with the veal jus
    • Serve piping hot with the sauce and vegetables
