When y'all fry, please leave more room between the top of the oil and the rim of the pot than he did. Biggest source of kitchen fires is an overfilled pot of oil overflowing because of the bubbles when something is first dropped in. It needs room to bubble away without overflowing and igniting on your burner. And if an oil fire does occur, don't try to put it out with water. That will cause the fire to explode. First turn off the burner, then cover the pot with a lid to smother the fire inside the pot, and then try to smother any remaining flames.

Anne Reardon did a video about that fried egg recipe, explaining that frozen yolks can never cook too runny or jammy become of the way the yolk is permanently coagulated from freezing.

don't bother trying to fry a frozen egg ; yolks undergo gelation when frozen, they will never be runny after that, it's a camera trick. How to Cook That did a good breakdown on it. if you want to fry an egg, do a soft boil so the white sets and ideally the yolk is still runny.
If you wanna fry a whole egg, just make a scotch egg. With that you can actually get fried crust and a runny yolk, although it'll be hard to get the timing right for both the meat to be cooked, while the egg yolk is still runny.

dude forgot lol, the trick is to deep fry corn starch slurry whilst stirring, it'll stick to all the dirt in the oil and you can remove it as a clump, leaving clean oil behind.

@@ApplCharm yeah just water and cornstarch and the restaurant industry they use that to thicken a lot of sauces so that they don’t have to reduce them for a long time. Cornstarch as an emulsifier is why Chinese food sauces shine so good the first night but then they all break the day after in the fridge cornstarch slurry baby.

tip for shells broken into the egg mixture, use the remaining larger shell half to scoop them out. it is way easier than trying to grab them by hand. Not sure the science behind it, but it's like humpty dunpty wished to be put back together again.

As far as I understand from the Deep Fried eggs, is that they have to be boiled for just a couple of minutes before freezing them, so you have the finished boiled egg before battering and frying it, prevents explosions and keeps it from getting overcooked as you freeze them.

egg yolks coagulate at higher temp than egg white. whites always cook first. that is how u get a sunny side up
The egg yolk will never be runny after freezing the egg. Science happens and it irreversibly (at least in the way an average person can try, I'm sure you can reverse it with some science) turns gummy. You can see it for yourself if you freeze an egg and then let it thaw, eggwhite will be fine but yolk will act kinda like cured yolk no matter how long you let it thaw.
It's actually because the egg was totally frozen. Egg yolks chemically change and turn into gelitin when frozen.
It's actually why the first fried eggs turned out way better, since his broken freezer was only able to partially freeze the egg, but not the yolk.
Soft boiling or poaching the egg would be the ideal way to deep fry an egg, though it might be doable if the egg was flash freezed with liquid nitrogen or dry ice for a short enough time for just the outside egg white to freeze.

The higher you cut it, the thinner the stream of vinegar coming out. Weirdly enough, the same packaging is used for pharmaceutical alcohol products in Greece.
It's so the alcohol doesn't evaporate. Vinegar is often produced on the same facilities so they use the same packaging.

The recipe in 9:31 rekinds me of Kwek kwek, a Filipino street food using Quail eggs coated with flour and all that stuff idk the details, you should try it (especially with the sweet sauce, or the sour one if you prefer that!) I doubt it'll break inside because (I think) it's cooked separately with a thoroughly cooked yolk! Still deep fried as hell so if you can add it if you make a part 2!
