- Hello, friends! Please join me today as I cook a scrumptious casserole; plant French fillet beans and radishes in the garden, and work-out in the home gym. Recipe for the casserole is written out below. Thank you for watching! #homesteading #cookwithme #casserole

Sausage and Peppers Casserole
For the sausage and peppers:
2 Lbs. sweet Italian sausage (or, use breakfast sausage)
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cups (or more!) shredded Cheddar cheese
For the egg custard:
12 large eggs
1 cup sour cream
1/2 cup heavy cream or milk
1/2 teaspoon Italian seasoning
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
Preheat oven to 375F (190C). Grease a 9x13 inch baking dish.
In a large skillet over medium heat, cook the sausage, breaking it up with a spoon as it cooks. Transfer the sausage to the baking dish.
Add the onion and peppers to the skillet. As the veggies release their liquids, scrape the bottom of the skillet to lift up the flavorful bits of meat that have stuck to the bottom of the skillet. Then lower the heat, cover the skillet, and let the veggies sweat until tender -- 4-5 minutes. Transfer the veggies to the baking dish, and stir to mix with the meat.
Top the meat and vegetables with the shredded cheese.
Making the custard: Whisk the eggs in a large bowl. Then whisk in the sour cream, heavy cream or milk, the Italian seasonings and the salt and pepper. Pour the custard over the ingredients in the baking dish.
Cover the dish tightly with aluminum foil. Bake in the preheated oven for 40 minutes. Then uncover the dish, and continue baking until the custard is set -- 15-20 minutes.
Cool slightly before serving.

When I saw this recipe yesterday, I realized that it was Keto friendly! I made it for dinner last night (I halved the recipe) and loved it, so much so, that I ate almost a third of the casserole all by myself. I don’t suggest to anyone to do that however!

This looks positively yummy! My American Bresse pullets are now about 13 weeks old, and should start laying eggs between 16 and 18 weeks old, and I have two older Rhode Island Red hens that currently lay a few eggs each week - Then I'll have lots of eggs that will need to be used up! I think my son will really enjoy this casserole!

In Romania we use lovage for garnish the soups, it is called leuștean. I live in Massachusetts and this herb is very precious and hard to find. I tried to grow in my garden but didn’t do well.

Another amazing post! Well deserved almost 70k in your wonderful, unique and totally positive community! Cheers! The casserole looks amazing and has tons of sausage. If I make it I'll use greek yogie instead of the sour cream so that is much healthier and will be a huge pack of protein along with the eggs/saus. I love cheese but I'll decrease that a bit too. ps no one uses an electric skillet to cook on you tube and it is a wonderful way to prepare -especially with the size and depth of the skillet you use. One thing on the dried spices I think if you massage or break them up with your hands as you throw them in they release more of their yummyness. Again, really neat to see your wonderful gardens and really how easy it is to plant. I think most of the work is in preparing the soil and beds. I've never planted. We tried it once as kids in the foothills at 8,000 ft and either the veggies didn't grow or were eaten by deer and rabbits. Potatoes were the only thing and they were small but good! Best, from Colorado!
