I'm glad I came across this. I wish more Professors would take the time to actually slow down and explain this stuff. Maybe the ABET accreditation forces them to fit so much into their courses that they feel they don't have the time to explain anything very well. Overconsolidation: draw a "before soil removal" profile. It is 10m-thick with a point located at depth z = 4m, i.e., 6m above the bedrock. Then draw an "after soil removal" profile. It is 8m-thick because the top 2m of soil have been removed. The point is still 6m above the bedrock, but only 2m below the new ground surface.
Underconsolidation: draw a transparent bucket full of water, with clay particles in the process of sedimenting inside.
