Being brought up on pasta e fagoli, I make this all the time. Actually, I make this in the Instant Pot. My Grandmother use to make this vegetarian, without meat, and I do it the same. Made this once, ran short of tomatoes so I used V8. Delicious!
Oh gosh now I have to make that tomorrow. One thing I would add at the very end.......fresh grated Parmesan Reggiano cheese added to each bowl. Yummy! I’m surprised Rick didn’t have a fresh loaf of bread in the machine ready to go with that pasta, lol.
I want to pass on a recipe that my mom made, so easy and so good. This recipe you made us somewhat similar. I think you will like it. I have my cooked rice ready. Fry diced onion, peppers in pan, add ground meat, salt, pepper and Italian seasoning. Get a casserole dish and mix all ingredients together. Add a can of Campbell’s tomato soup and about 1 1/2 tins of tomato juice. It should be a little liquidy so that when you cook it, most of the liquid gets absorbed. Bake at 350 for about an hour, might need more or less depending on the liquid, and just before serving, melt your favourite cheese....mozzarella, cheddar whatever you like, on top and serve. I really enjoy this and I have made it without meat and with veggie ground....all good. I have a friend who cooks it with salsa so make it your own. I hope you guys try it and let me know how you liked it. It is now named Mother Ashton’s rice in honour of my mom.
No parmesan or romano cheese on top!?? When I make pasta fazool I like to add some cut up pieces of pepperoni! I also cook my Ditalini separately and keep it in a covered container in the fridge, this keeps the macaroni from getting mushy in the soup. When I want soup I just put a couple of spoons in the bowl and cover it with hot soup, and add some Italian salad croutons that you can buy in any supermarket.
Now thats a nice looking pot of soup guys! Do you think you could make a Lasagna Soup, I tried it for the first time two years ago and fell in love with it! It was Sooooooo Gooooooood!!!

I like to crush/rub the dried herbs between my palms to bring out the aromatics. It really does make a difference. Livens them up.
