JAs cook with a lot of spices, so wherever they travel to foods taste different. It doesn't mean that the meals are not tasty, it's a taste you are accustomed to. But, too much spices are not good long term especially the powe ered spices.

I have tried Jamaican Tun Cornmeal twice and I did find it to be a bit Gritty . Antigua , The Virgin Islands and Barbados National Dish " Fungi/Coucou " is made with Okras that gives it a smooth texture .

You can use any fish you desire such a Salted Cod with Gravy, King Fish or Can Mackerel etc
