The pickles were sweet, pickled with clove and allspice- and they were delicious with the beef, onion & tomatoes. The cheese we used was an orange cheddar. I say, don’t be uncertain about the pickles. Try them! You could also use sweet pickle relish instead. It’s a great combination. A pinch of red pepper flakes, salt & coarse ground black pepper will also perk up the flavor a bit.
