  • Bonjour, pastry lovers! Join me in celebrating the Epiphany with this delectable Galette des Rois recipe - the iconic French King’s Cake! This cake has a sweet almond filling called frangipane and it's so delicious!
    The Galette des Rois, or King's Cake, is a traditional pastry enjoyed in France and other countries to celebrate Epiphany, a Christian holiday that commemorates the visit of the Three Wise Men (or Three Kings) to the infant Jesus. This celebration falls on January 6th, twelve days after Christmas.
    The cake is symbolic of the journey made by the Three Kings to find the newborn Jesus. Inside the Galette des Rois, a small trinket, often an almond or a figurine representing the baby Jesus, is hidden before baking. This trinket symbolizes the Christ Child or the king. When the cake is served, it's a fun tradition for everyone to eagerly eat a slice, and the person who finds the hidden trinket in their piece is crowned the "king" or "queen" of the day and gets to wear a paper crown that often comes with the cake.
    This tradition adds an element of surprise and excitement to the celebration, bringing friends and family together as they share the cake and wait to see who discovers the hidden treasure inside their slice.     RECIPE:
    ♥ For the dough:
    - 2 rolls of puff pastry (bought or homemade)
    ♥ For the Custard:
    - 150 ml / 159 g (1/2 cup + 2 tbsp) of whole milk
    - 1 sachet of Vanillin Sugar (or 1 vanilla pod)
    - 2 egg yolks
    - 25 g (2 tbsp) of sugar
    - 15 g (2 tbsp) cornstarch
    - 5 g (1 tsp) of flour
    - 10 g (2 tsp) butter
    ♥ For the Almond cream:
    - 2 eggs
    - 125 g (1 cups + ¼ cup + 1 tbsp) of almond flour
    - 100g (¼ cup + 3 tbsp) sugar
    - 100 g (¼ cup + 3 tbsp) of softened butter
    ♥ For the finish:
    - 2 egg yolks
    - 40 ml / g (2 tbsp + 2 tsp) of water
    - 40 g (3 tbsp) of sugar
    Bake at 180℃ (355°F) for about 45 minutes
