Hi Jess - happy holidays!! and quick note on the canned coconut milk -- yes, that's correct. you're not supposed to drain it. you're just supposed to SHAKE THE CAN really well before opening it since the liquid (watery part) tends to separate from the fat portion. thats why it was watery when you poured it out, just an FYI. im lloving your vlogmas vids!
Best and easiest rice recipe : 1.melt knob of butter in the pan and add cup of rice.stir it on high heat 2.pour 2 cups of boiling water.cover with a lid. 3.turn the heat off and leave for 30 mins. Rice will absorb all the water and you’ll have the fluffiest tastiest 🍚 Keep leftover rice in the fridge and make egg fried rice next day. Cook once - eat twice 😂

The Complete Asian Cookbook by Charmaine Solomon is an absolute beast but such a good cookbook (especially for curries), not a single dud recipe. yours looked really lovely though - probably just need to add a few more ingredients to add depth of flavour, but you’ll get there once you build your pantry up and work out what goes with what! glad you’re feeling better my lovely, you’ll have to let us know what the Aesop products are like once you’ve tried them xxxx

Hope you feel better soon 💖 I‘m half Thai and I can confirm that the recipe is not authentic - it‘s difficult to make fresh pastes, I would suggest that you pound a clove of garlic and coriander root with a good quality store bought paste instead. The trick is to fry the curry paste on medium heat and gradually add coconut milk. Kaffir lime, coconut sugar and fish sauce are also added in red curry. Hope this helps! x

I listened to the open marriage today in focus and nothing seems to surprise me nowadays. I listened on the drive home last night to the one with the guy from Syria, I felt so proud listening to how he has made a life for him and his family xx
I listened to the open marriage podcast as well. Relationships take a lot of effort. I don't know how the couple on the pod are able to juggle having two other romantic partners each as well as their children. It's hard enough keeping one person happy. Lol.

I think the whole thing about Lucy letby is horrific.. the women murdered those babies and those poor parents having to see it…. Consultants who worked with her were raising the alarm long before it ever got to trial and she convicted ….. I’m sorry I don’t believe she is innocent

If you can get hold of Kaffir Lime leaves, they really make a difference to a Thai Curry
