    Hi Justin. I was in an awful accident in the military which forced me to medically retire in April of last year. After having my identity I had established in the Navy over the past 9 years torn from me, I went through a really tough time where I was trying to figure out who I was as a civilian. I started going to school and was not feeling the same fulfilment as when I was in the military, so I started poking around at jobs that I would consider to be fun and challenging. After coming across your channel and getting the feeling that cooking is something I could really enjoy, I reached out to my friend who is the executive chef at a well-known seafood restaurant and asked him if I could start out washing dishes for him. He threw me straight into the fire as a cook and since I started, I've been loving it and I feel the same fulfilment I sorely missed. Thank you for sharing your passion on RUclips!

    Ate here before. I loved the duck as well and so proud to have an elevated Taiwanese inspired tasting menu in LA!

    3:36 I've always found the differences in cultural preference for acidity to be very interesting. This dish sounds a lot like a traditional steamed preparation of fish in Taiwan and China, usually not served with any acidic accoutrement. I love your videos! It's great so see some insight into fine dining from the perspective of someone who knows how it's made.

    Looks wonderful, although I wonder what he did to update his menu in 2024. Prices have been raised dramatically, he’s charging 325 for the menu!!! That’s Providence level pricing!!!

      No way - plenty of food at this meal, I couldn't finish the rice that was served with the duck dish, and I also didn't eat all of the bread served with the crab course.
