I actually recommend choosing someone locally! They will be able to be physically present for training (without you having to pay travel costs!) and they will be most in tune with the preferences for YOUR specific market, since all areas differ wildly! Plus, it feels great to partner with another small local biz ❤️ I would google "coffee roaster ____ (your town)" and see what you find and set up some meetings! Go with your gut and choose one that fits with your values, supply needs, and budget!
I would stress out if I had to run a business all on my own. Great piece of advice. Some people will always try to talk you out of your ideas.
