And what are you meant to graft on to the rootstock is it just another stick from another avocado tree and why would this make the tree produce better fruits because I have just started growing an avocado tree from seed and everyone keeps telling me to graft it and I don’t know why. Do I need to graft my tree to make it produce better fruits?
The difference between growing plants from seed and propagating plants from cuttings off a parent plant is genetic variation. The plant the grows from a seed may take a long time to mature (as many as 5 to 10 years) and even after that, it may sometimes not produce the same fruit with the same taste. The fruit may be of poor quality. Where as, If you graft a scion (tender branch) of an already mature, fruiting tree, on to the plant that grew out of a seed, not only will it grow faster and fruit sooner (2-3 years) and will give you the EXACT fruit of the 'donor' tree. This is why grafting is highly recommended for better degree of guranteed success. The seeds of many fruit produce trees that are different from the parent, because seeds themselves are produced by sexual reproduction - they receive genes from a male and female to form. As they are a cross from two sets of genes, many fruit trees are not “true to seed”, that is, their seeds will produce a different variety of tree from the parent. For the botany purists, yes, there are some exceptions, but this is generally the case.
The time taken to produce fruit is shortened because we using scions from fully grown plants, meaning that the cambium layers and tissues are already fully developed and will be ready to fruit. Whereas for plants growing from seed, they need all those years to get them to be fully developed before they reproduce. And for avocado its like forever.
Both the replies are excellent. In short , when you graft you are putting the maturity of the tree into small plant. Hence you get fruits in next two years. It's like you are putting wisdom of 40 years in little boy of 4 years!!!!!
I should like to know after the grafting of the avocado plant, approximately what will be the minimum height that the fruit start to appear and also the maximum height.

No need to cover the open cut of the scion top? Also is there a need to wrap the scion with grafting tape? I have seen someone placing a paper bag over the grafted portion to retain moisture & help the joint heal. Your comments please.
