  • WHAT'S FOR DINNER | LEMON HERB CHICKEN MEATBALLS | EASY SUMMER MEALS
Oh my goodnesssss, these hit so hard! These meatballs are perfect for the summer- the herbs and lemon really just make things bright and perfect. I plated these over some orzo with a cream sauce and it was perfection, you must try!
I didn't work off of a recipe so here's a list with rough measurements, feel free to change up the ingredients like the herbs and other flavors, make it how you like it!
    -1 lb ground chicken
    -1 tbs fresh sage: chopped
-2 tbs fresh thyme: I left the leaves whole
-1/4 cup Italian flat leaf parsley: chopped
    -1 egg: beaten
    -1/3 cup panko
    -1/4 cup whole milk
    -3-4 cloves garlic: chopped
    -1 tbs lemon zest
    -Salt and pepper to taste
*I baked these at 375F for 35-40 minutes and finished in a pan to crisp them up.

Thank you! You definitely should, it’s a nice lighter meatball and there’s so much flavor!

Did you let the meatballs cool on the pan before you took them off? Might help with them sticking.

Ohhh I haven’t tried that! I’ll have to do some more testing, and I’m sure it’s because I used tinfoil as well, I might try parchment paper next time, but thanks for the tip!

Your thyme stems or so tender. You could have just chopped everything up together. They're not woody, looks so good yum 😋
