Great. Long back during younger days my Marwari friend prepared tomato sag. In an earthen pot kept over a charcoal stove, add ghee, rai, jeera, hing, and cubed tomatos over it red chilli, haldi and salt, don't mix but just cover it for a few minutes. Then open and mix it. The aroma just excellent. Now make Roti. Just while ready to eat just place the sag over the stove and wait a few minutes then add your split pappads over it and just give gradual mix from sides not breaking the tomatoes coated with ghee and masalas. Just close the lid and bring it to your eating spread. This is especially when there was only home cooking not much worry about more herbs and ingredients. Pappads could be replaced with silky saves at home. Try it.

In our Marwari household we have Papad+Methi Dana+Dahi (no onion garlic) usually in winters. It's so delicious. It's baffling to me how these kind of dishes haven't travelled outside Rajasthan as much as it should have.
We used to make it at home since last 60 odd years and my mother learnt the recipe from Marwadi neighbours. A small twist she gave is by adding crisply fried eggplant slices at the end.
