PAPAD KI SABZI
Preparation time 5 minutes
Cooking time 15-20 minutes
Serve 2-4
Ingredients
10-12 Urad dal papad, उड़द दाल पापड़
2 tbsp Ghee, घी
¼ tsp Onion seeds, कलौंजी
few Fenugreek seeds, मेथी दाना
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
2 inch Ginger, chopped, अदरक
2 Green chillies, chopped, हरी मिर्च
A pinch of asafoetida, हींग
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
½ tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Curd Mixture
2 cups Curd, beaten, दही
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Coriander powder, धनिया पाउडर
For Tadka
½ tbsp Ghee, घी
2 Dry red chilli, सूखी लाल मिर्च
For Garnish
Coriander sprig, धनिया पत्ता
Process
Heat a non-stick pan, roast the urad dal papad from all the sides and keep aside for further use.
In a kadai, add ghee once it's hot, add onion seeds, fenugreek seeds, cumin seeds, fennel seeds and let it splutter well.
Add ginger,green chilli, asafoetida and saute it well.
Add prepared curd mixture and mix it well.
Keep stirring and cook on medium flame.
Add sugar, salt to taste, water and stir continuously on low flame till the curd combines well.
Break the roasted papad roughly into curry. mix well.
Simmer for 2 minutes or more.
Switch off the flame. Add coriander leaves and mix well.
Transfer it into a serving dish, pour the prepared tadka on top of it.
Garnish it with coriander sprig and serve hot.
For Curd Mixture
In a bowl, add curd, degi red chilli powder, turmeric powder.
Add coriander powder and mix it well.
Keep aside for further use.
For Tadka
Heat ghee in a small tadka pan, add dry red chilli and let it puff up.
Keep aside for further use.

In our Marwari household we have Papad+Methi Dana+Dahi (no onion garlic) usually in winters. It's so delicious. It's baffling to me how these kind of dishes haven't travelled outside Rajasthan as much as it should have.

We used to make it at home since last 60 odd years and my mother learnt the recipe from Marwadi neighbours. A small twist she gave is by adding crisply fried eggplant slices at the end.

But believe me chef, nowadays whenever I'm using red chilli powder in my cooking i always remember your word that says "use less, else you'll have prepared mirchi ka..."
Because all these time, at the end, my dishes would be very spicy due to too much of chilli powder and would repent it at the end.
Thanks a lot for reminding us from time to time to keep a check on our usage of chilli powder.
