🔹 3 ½ cups uncooked Penne pasta
🔹 Salt
🔹 Private Reserve Greek extra virgin olive oil
🔹 3 tbsp grated Parmesan
For Meat Sauce
🔹 3 tbsp Private Reserve Greek extra virgin olive oil
🔹 1 large yellow onion, chopped
🔹 1 ½ lb lean ground beef
🔹 3 garlic cloves, peeled and chopped
🔹 Salt
🔹 ½ cup red wine such as merlot
🔹 28 oz canned crushed tomatoes
🔹 2 dried bay leaves
🔹 ¾ tsp ground allspice
🔹 ½ tsp ground cinnamon
🔹 ¼ tsp ground nutmeg
🔹 pinch sugar
For Bechamel
🔹 ⅓ cup + 2 tbsp Private Reserve Greek extra virgin olive oil
🔹 ⅔ cup all-purpose flour
🔹 ½ tsp salt, more if you like
🔹 ¼ tsp ground nutmeg
🔹 4 cups 2% milk, warmed
🔹 2 large eggs

I’ve only used butter for the bechamel, and add a handful of Greek grated hard yellow cheese like Kaseri, Kefalogravgera, or Kefalotyri, if none available, Parmesan is a perfect substitute. Also, more cheese to cover the top for a beautiful golden color.
The trick to the béchamel, Greek way, is the addition of nutmeg, + Kefalograviera. Top w Semolina! Wine 4 sauce , should be MAVRODAFNI.
@@annavsmith1I’ve never heard of semolina on top. I just grate cheese on the top. Would it go before or after the cheese?
I made it twice this month. The second time, I made the bechamel with butter instead of Greek olive oil. Both times it come out great. I'd post a picture of it if I could.

Holy cow. I JUST made this from an American cookbook. Then I said to my self and my husband, you know there HAS to be an easier way to do this. I used two pans, 4 little bowls, 3 big bowls, 🤦♀️. So I look, and there you are. I just KNEW my friend’s mother didn’t jump through hoops lol. NEXT time… 🙈. Like I’ve always said, your site is the absolute best.

Meat used for Pastitsio is :: Beef + Pork ... Lamb tastes just too gamey .... andd Greek Pastitsio s Béchamel is patended by #Tselementes, using nutmeg+ eggs,+ Kefalograviera! Wine is an absolute necessity;Mavrodafni is used:Otherwise it's NOT PASTITSIO 🧡
the moment I saw it's penne I know it's wrong 😭😭😭😭😭 I feel this shouldn't be labelled as Greek pastistio as it's misleading. we use the long hollow noodles. it may be more appropriate to refer to it as "your own pastitsio inspired version" of it.

My auntie is Greek and she uses penne as well.Of course you can use a different pasta. But my mother always used the original long thick macaroni🎉
