Active dry yeast can be substituted with 25 % less instant yeast. ( 25% more dry active in place of instant yeast) 4) Please do keep in mind, large amount of yeast doesn't make your bread good. in fact it can spoil the taste. So, don't over dose it. 5)As per our opinion- Veg and Non Veg are concept for things that are visible from naked eyes. These yeasts are eukaryotic, single-celled microorganisms classified as members of the fungus kingdom. Something similar to bacteria that present in curd or in our gut too. These can't be done at home unless you lab set up or manufacturing unit . But you can make wild yeast at home and it can last up to infinity with little care.

Next time try using little less quantity ( if recipe require 1 tsp use 3/4 tsp) just rest it for some more time.

You can use aluminum-free baking powder, which is a combination of the baking soda and cream of tartar (you can also combine both and used as baking powder). Using yeast will not produce the same texture or flavour as we are accustomed to.

Aapne kaun sa yeast use kiya- yadi active dry yeast ho toh usko pahle active karna padta hain- yeh mandatory hain. yadi instant dry yeast ho toh use driect flour me dal sakte hain. Yadi yeast active nahi hua toh aap us aate se roti ya poori bana le usse bread nahi ban payegi.

I have two doubts on activating the dry yeast.. 1. Do I need to grind the yeast before mixing it in water n sugar ... 2. What is resting time to activate the dry yeast ..
We are not able to understand your 1st question.
2) Normally 10-15 minutes are sufficient to activate the yeast. Just follow the steps mentioned on label of the packet to activate the yeast.

Normally we don't use any yeast for making idli batter because the mixture of dal and rice ferment automatically when we keep them for a couple of hours.
Anyhow you can use active dry yeast if you want.
