I always shred my own cheese since I heard most cheese manufacturers use cellulose to keep the shredded cheese from sticking together. Besides fresh shredded tastes 1000x better. Gonna be mostly sunny in Ohio all week 😀 I think I’m going to have to refine my gas soon lol. Great video as always Johnny, great job.

Good info Johnny. I like the flatbreads for my griddle pizzas. Many different thickness' and sizes. I still gotta try the 2 ingredient crust. My Blackstones have the lids so its nice for melting the cheese. Keep on griddlin' friend. 😁

I cook pizza on my gas grill on a pizza stone. Do a real pizza crust, cook it on both sides, do the toppings and finish it under the broiler in the oven, 1-2 min. Kids love it.
That's a great idea, I'll try it that way.
I love tortilla pizza on the griddle. Fast and good! You can make a stuffed crust pizza by melting cheese on one tortilla and then place another tortilla on top of that. Put your toppings on that one and you have stuffed crust! Tastes great!

That's what I do with really thin flatbreads.
I have an idea. Cook pepperoni on grill first then use the oil to brown the crust.

Good thought on starting your diet next week, Johnny - I think it's a law that you can't have pizza without a beer and I don't much care for diet beer.

With ya on that one. If you want light beer, just add water to good beer, doesn't make sense does it.
Best pizza dough....bread flour, water, yeast, salt, Olive oil. Oil the top of your dough ball and rest in fridge 24hr. Long resting time gives a great chew and olive oil a crispy crust. Roll, cut and proof the same dough to make bread sticks.

Currently I'm using some canola but I've used avocado oil as well and it seems to work fine.
I don't think the spoon matters as much. We don't use them here in Albany Ny.

A domed lid, like from your popcorn video would do wonders to help cook the top faster... Maybe. Heck, I'm not a rocket surgeon, what do I know?
Ya that's a good idea Warden. I got a round one which I think would fit the tortilla pizzas but I'll have to get a bigger one for the rectangular pizza. I appreciate the suggestion, and thanks for watching.
You need top down heat for pizza. A double sided pizza would work probably or a "stuffed" pizza I've seen it called.
That's a good idea boldr, I'll have to try a double sided next.
What about closing the lid as soon as possible? I think it would work great. Make them on a pizza peel
