  • Forty years ago, a ground-breaking cookery programme popularised the cooking of Indian food at home.
    In fact, it proved so popular in the UK, US and Europe, supermarkets ran out of the ingredients featured on the show.
    It was presented by the Indian actor turned food writer Madhur Jaffrey.
    ‘Madhur Jaffrey’s Indian Cookery’ was the first mainstream series about Indian food broadcast in the UK and the first to be presented by an Indian.

    So proud of this Lady!! Her first husband left her because she was too homely and not modern only to regret later when he saw her picture in the magazine.She's an inspiration to all the women!!

      Her husband was famous actor Saeed Jaffrey, he mentioned in his biography that he regretted that decision to his last breath.

      Yeah. He regretted his decision to leave her. Because his next wife was not like her. And so he missed her. And he did wanted to meet her just to say sorry but she never wanted to see his face. But she allowed her children to meet him.

      @@ravindrathakkar1234 Mughlai cuisine was influenced by Turkic cuisine because the early Mughal emperors were from central asia(turkey). Originally not an Indian cuisine.

    My late mother left me many cookbooks, including this lady's books.
    Because of pioneers like Madhur Jaffrey, British cookery is along with our supermarkets, multi cultural. ❤️

    I used to watch Madhur Jaffrey's programs avidly as a child and they sparked a lifelong love of cooking and eating Indian food. To me she will always be 'the coriander lady.'

    I grew up eating .. Chinese, Indian, and Persian food .. and I am blessed for that ..
    My mum had her cookbook in our pantry .. it is full of notes .. bookmarks ... and memories kept in oil stains ..
    I believe she got that book as a gift from Nan on her wedding day .. :)

      Not true, people were eating curry in the UK long before she arrived, and the first Indian restaurant was opened by Sake Dean Mahomed in Marylebone in 1810!!! Then there was Salut e Hind which opened in 1911, then the Kohinoor in Roper Street in the 1920s!
      Arguably, it was Edward Palmer who opened Veeraswamy in Piccadilly in 1926 that really opened up Indian cuisine to Londoners.
      Madhur Jaffrey is wonderful, no doubt about it, but what she did was really open up Indian cooking to many by being on TV.

      @@AJ-il1lm8ph7z We also obviously use specific names for the various dishes. South Asian food is very popular in the UK and we are aware of the differences between dishes. Curry is a general term, for a spiced South Asian dish comprising meat and/or vegetables and what Indians would call gravy, the term has been around for a long time and I think is Tamil in origin. We love South Asian food in the UK.

    Am glad that my parents used to take me to both Chinese and Indian restaurants in Central London in the 70's. Watching this clip reminds me of how things have changed in a lifetime, some for the better. They forgot the Lychees and ice cream to finish of an Indian restaurant meal!

      It was Bangladeshi Tommy Mia who who single handedly made South Asian or Mughlai Cuisine famous all over the world & in England. Indian foods are nothing but some vegis literally like hospital food with no flavour at all which is fine as most of the indians are vegetarians. .. it's Bangladeshi & Pakistani food or "MUGHLAI CUISINE" ( Mughlai cuisine consists of dishes developed in the medieval Ganges Delta civilization AKA present day Bangladesh with Persian cultural centres of the Mughal Empire since 600AD - to the present time) which you guys call so called indian food & which is painfully wrong. .. like this place Jackson Heights, which is occupied by mostly Bangladeshi descent or immigrants & the business but still people call it little india. . not only that, all those so called Indian restaurants all over the World are run by Bangladeshi people with their distinct taste of food choice & menus. .. would be great if people from The Western Hemisphere quit calling & quit associate everything "INDIAN!! .. INDIAN!!!!" from "SOUTH ASIAN SUBCONTINENT".
      There was no such a thing called india before 15th August 1947.

Indian cuisine is so wide that it’s hard to call one dish as Indian . Yes there was no india prior to 1947. But all the princely states were still a part of the Indian subcontinent . So the food still echoes to India .

      Hmm not really. They also preserve some backward parts of the culture too and this certainly helps justify the dislike towards Indians by other communities. Yes, preserving certain cultural values gives edge on other communities but if you are educated enough and well travelled then you being to realise the need for cultural values to be more dynamic.

    I still remember when you taught us how to make chicken tikka masala and butter chicken and many Indian restaurants copied it here in uk and Scotland and started claiming that they have found that dish 😂😂they don't even know in 1940s there was a restaurant in delhi india which started making it and is still present there

      1. "Madhur Jaffrey is very old and famous" OK, But she is not very famous in India.
      2. She literally took Indian cooking to British living rooms.
      Now, Listen Rogan Josh is not an Indian dish but a Persian one though very popular in Kashmir for obvious reasons. I am against forcing Hindu Nationalism in food but clubbing non-Indian dish as Indian is going a bit too far.
      3. I don't understand what agenda could be there in this. I agree that agenda may exist where foreign editions are involved. But when Indian journalists are involved, they don't really play any agenda
      Who is Indian and who is not ? We are very well aware of British view of India as a "geographical expression".
      Moreover food , Sport, dresses etc have a tendency of cross border transmission. You really can't have Passport or Visa for them . It sometimes seems bizarre also. But one has to be very careful that the real identity of India doesn't get diluted or confused. What is foreign is foreign no matter how much you like it .

    What a nostalgia, I recollect those days when our tv had just 2 channels and one of them was BBC, my mom used to avidly watch her program and take notes in a diary.
    The paratha being prepared here was one of the episodes we watched and I recollect my mom having prepared that in my school box.
    Even certain spices were never that commonplace as how it is now.
    Very happy to have seen this appear on my feed.

      @@ravindrathakkar1234 most North indian food is inspired by Mughlai and Persian food, because North india received a lot of immigrants from central Asia and Persia, during the middle Ages, but if you have any idea about history you would know that central Asian and persian have been coming to North india long before middle Ages even long before Islamic conquest of those area and that is why North indians have a huge central Asian and persian ancestry, and therefore the food is the representation of that history, secondly the lady looks like North indian, not really sure how pakisatani looks different

    Wow. I bought my first cookbook by her in the early 90s, never knew she had a show. I doubt it was ever on the air where I lived in the US. Thanks for the recipes!

    I still have her recipe book from the 80s..which my father used when he cooked in London. I used it to learn how to cook. It was such a wonderful book of tasty recipes.

    My most favourite and very first Indian cook whose tv cookery programs i watched on British television and even recorded and kept on watching again and again, made so many delicious dishes too following her recipe.     Years ago Gourmet magazine had an article about her and her recipes, one complete meal. I brought it home and next day bought all the ingredients, over the next 2 days i made all the recipes, what a feast. Then i bought all her books, wonderful lady.

      @@bhavikasicka7871 As a matter of strategy Indian chefs should focus more on vegetarian cuisine if it needs greater recognition world wide. WHY ? Meat is liked and cooked by all countries. Lebanon, Africans,Europeans, East Asians ( someone told me snake tastes like Chicken).Meat is staple diet in many societies...so there is much more competition so Indian chefs should focus more on vegetarian food in future as world is getting more calorie conscious, wants less cholesterol and there are Corona and disease transmission fears. So we must see our Global positioning in Vegetarian cuisine as a matter of policy, though non vegetarian food should not be ignored but Indian cuisine should immediately mean Vegetarian cuisine. Just like the reference of Hindu means vegetarianism though many if not most like me are non vegetarian.

      Indian foods are nothing but some vegis literally like hospital food with no flavour at all which is fine as most of the indians are vegetarians. .. it's Bangladeshi & Pakistani food or "MUGHLAI CUISINE" ( Mughlai cuisine consists of dishes developed in the medieval Ganges Delta civilization AKA present day Bangladesh with Persian cultural centres of the Mughal Empire since 600AD - to the present time) which you guys call so called indian food & which is painfully wrong. .. like this place Jackson Heights, which is occupied by mostly Bangladeshi descent or immigrants & the business but still people call it little india. . not only that, all those so called Indian restaurants all over the World are run by Bangladeshi people with their distinct taste of food choice & menus. .. would be great if people from The Western Hemisphere quit calling & quit associate everything "INDIAN!! .. INDIAN!!!!" from "SOUTH ASIAN SUBCONTINENT".
      There was no such a thing called india before 15th August 1947.

    It is of no small consequence that Indian cuisine became the prime 'take out' dish for many British people - Jaffrey merely consolidated a love for the more exotic & cosmoplitan foodstuffs from around the globe. As Norfolk212 asserts, this lady became a cultural pioneer for a more adventurous way of life, in terms of dining...a legacy that (on the whole) has become a default for many households across the UK. As an individual who loves to cook for my family, the inroads that she made for the preparation of wonderful & exciting dishes has not been lost on me - this made de facto thru' mine & my son's love of Asian food....dear lady, I salute you with a spatula in hand .... 🙂

    As a foreigner, Indian cooking is so far the Real Cooking of step by step process with patience, which includes Frying, sautéing, steaming, boiling, Roasting - all at the same period of time in a single dish 👌🏻..
    I wouldn’t even believe making pizza or burger is cooking as it’s just sprinkling stuffs on it and throwing it into the oven or stuffing in middle of 2 buns 😅

      Every food has its challenges, with the likes of Chinese foods which is extremely difficult for anyone who has never done that as it has no margin of error, similarly Italian or Mexican. For me Chinese food is probably the most difficult food to make for an amateur chef as it needs to be cooked really fast and not possible to correct error after tasting.

    We are more open that we imagine ourselves to be. Video media has really helped to see what a spice looks like, what a finished dish should look like, un a way recipe books could never. And then availability of ingredients help in whether we try to make a dish at home or not.
    Thanks to these pioneers for sharing their cultures.

    I'm Bangladeshi and currently studying abroad. After eating non desi food for 3 years, I've decided recently to start cooking our traditional dishes. Needless to say how much I missed Bengali food. South Asian cuisines are so versatile yet they all have something in common.. the soul ingredients, "spices". Incorporating the spices in different ratios make our food distinct and special ❤️

    When I moved to the US more than 20 years ago from India, I knew basic Indian Vegetarian cooking. Her book taught me how to make several dishes that were Indian non-vegetarian and also regular recipes for everyday cooking! Thanks!!!

      Its food from the sub continent not just Indian. Even in India North Indian cuisine differs to South Indian. Then you have Bangladesh and Pakistan and ironically many of the restaurants in uk are owned by Pakistanis and Bangladeshis yet called Indian..🥴

    As a kid, I loved her programmes. I was and am a fussy eater, however I have sampled and enjoy Madhur's creations.
    Her accent and intonation are warm, loving and reassuring.
    Unassuming, like Farmhouse Kitchen or Delia Smith, broadening and encouraging the audience to cook. And if the viewer bungles it, so what, no matter.
