Nice save, Chef! You are the Dr. Who of this cheesy broccoli stew.
Suzanne Baruch 😂yes!!
Suzanne Baruch nice 👍
lmao I died of laughter when you said the first batch was terrible. I not only love this channel for your sense of humor, (obviously), but also for how brutally honest you are with all your recipes subbie 4 life!!
This is why I love you Jon. You easily could have edited this to make it seem like you are perfect everytime but instead you let us not only learn from the mistake but appreciate how you got from error to success.
Soup too thick? Then call it a dip! Then slowly look over your shoulder to make sure no one heard you say soup.
fascinating to see how you fail. I learned a lot this way. thanks, chef!
Agreed. This is what separates the TRUE teachers from the showoffs.
Eric O agreed! I like that he's not afraid to show us his mistakes, and walk through his thought process in improving them.
I want chef jon to narrate my life.
Ashleigh Sanders sameeee
It is everyone's dream, dear.
Adam Fuzzybutt He's not everyone's cup of tea. I personally like his voice, it makes the execution of the jokes so much better. Go watch his older stuff, from like 2007 - he has a much deeper voice in those videos.
Waiting for the day chef John will respond!
Keep waiting.
Food Wishes 😂😂😂😂
God speaks.
He's so sassy! lol
He is the Calvin Coolidge of building a commentary bridge.
I'm vegan, can I replace the cheese with dirt or sand?
Just use the "Parmesan" in that green can. As we all know, there's no actual cheese in there anyway.
That made my day. Thank you dear!
9737asdfghjkl clay most likely has the same texture as cheese.
I recommend mummy dust, personally.
That's nature cruelty. just don't eat!
The thicker version looked like gourmet baby food, and from your reaction, it possibly tasted like it. Glad you left that part in, and explained how to fix it, since many people would end up with the same results if they tried this. The thinner version looked excellent, and good point on using bite size croutons. Also love the mix of cheeses you used. Love your videos!!!!

I once cooked a pot of gooey starch, because I thought you could simmer spaghetti noodles low and slow. This year during the holidays, I noticed people were actually excited that I was cooking. It was a surprise to me, and it felt very good! I've come a long way, thanks to you Chef John. :-)
The only food channel that show you how we may potentially failed and saved the meal.
Thanks for showing the whole video. This is a perfect example of how to "stay with it" to achieve the desired results.
Winner Winner - Broccoli Soup for Dinner!!!
After watching this, I opened a can of cream of chicken soup, buttered and toasted some bread, got my pack of sliced "cheese", put it in a stainless steel bowl and popped it in the oven. I feel so gourmet.
"...you can use veggie stock, whatever that is."
I want to hug you through the RUclipss! :D
The thick one actually looked tastier to me. But I'm also the type who breaks like six-seven crackers into soup. Possibly more. Definitely more.
oh my gosh its so nice to see such a skilled chef fail and then try again with such good results thank you chef jon
I prefer thicker soups so that one looked better to me.
7 minutes! So close I've practically met chef John, and by practically I mean not actually at all.
zanesmith666 why the heck did I read this in chef Johns voice
SodaPopJX I did too!😂
+SodaPopJX wow yeah me too
You said the first one was terrible but I still would have eaten every.last.bit! 😄
Lesson learned : Don't become despondent, over a Broccoli And Cheese au gratin!
love how he narrates his fail but still keeps his tone of voice calmly lol
Best channel on RUclips. Please don't ever stop making videos.
Does anyone else get excited to get a notification from here?
posting videos of fails just makes chef john more awesome.
I want to thank you for all the recipes. I can now cook foods people will eat.
I kinda like how you still showed your mistakes in the video, its cool because it shows that even a chef like you isnt perfect and we mess up but dont stop filming because the show must go on!
No views and 1 like. That's when you know you're good.
Never let the food win.
Chef John blew a 3-1 lead.
Looter lol
Either way thick or thin it looks delicious 👌🏼
6:08 I don't know why maybe because I wasn't expecting it, but the way you said that was so hilarious.
Man I love thick soups, both look awesome to me
oh but the thick one looked good too!
Something I've been wondering for a while is why we don't want the garlic to brown at all in these recipes. Isn't toasted/roasted garlic pretty delicious? Just wondering, thanks.
I always get so excited when I see that you've posted another video. Your recipes are always so amazing, and watching you cook always convinces me that cooking isn't as complicated as we novice cooks are afraid it is. I love when you show us your mistakes too - it reminds me of myself in the kitchen attempting new things. It's hard to describe a cooking video as inspirational, but your cooking videos are inspirational. Thank u Chef John
I personally prefer thicker soups. Thanks for the recipe!

Please make a bundt cake with a pudding ring. Pretty please.
Aynge Mackay What kind of unholy creation did you just describe?
A magnificent one?
I would try this without blending the soup, or maybe just blending a portion of it. I thought it was strange when he blended it, I prefer broccoli soups to have broccoli chunks in it.
I had a comment but I can't see through my tear!! Too funny!! Love the Dan Fouts reference...appropriate for the way you "Charged" ahead to save the soup!
Before blending could I fish out some of the broccoli and put it back in after straining it so I still have some chunks?
Danielle Anderson No! Your kitchen will catch on fire if you stray even a tad from the recipe!
"Dan Fouts of your cheese amounts..." - I got a real Charge out of that.
I was hoping this was going to be broccoli cheddar soup 😭
imanasaurus rex Use cheddar for the topping? Or just melt cheese into the soup.
Here is a tip... Add cheddar, and a little milk, or cream. Bang! Broccoli, cheddar soup. This isn't rocket surgery.
I am not sure why you hate the thick soup so much... honestly I enjoy thicker soup, and what you showed would be just about how I would make this.
Nice one Chef, Just making a batch of my Broccoli & Stilton soup mmmmm :)
Great video as usual chef! =]
I had a question and was hoping you would be willing to help. I'm looking to buy new pots and pans and wondering what brands you'd recommend for stainless steel as well as non-stick. Any help will be greatly appreciated!
Well. I thought the first version looked beautiful and delish!
The first bowl of soup looked amazing... to me any way 😛 I will certainly try this tomorrow. I love your channel
Well. I like really thick soups, I guess you wouldn't call it a soup any more. It looked delicious . The second version Looked awesome as well.
Thaaanks Chef. My next food wishes:
1. cheese soup with crutons and broccoli toppings
2. bread soup with stale broccoli and cheese topping
3. bread soup with stale cheese and broccoli toppings
4. cheese soup with stale broccoli and melted bread
And as aaalways, enjoyyy!!
I love how he roasts himself 😂😂😂
Your videos always make me laugh!! lol the soup at the end was terrible .. hilarious
One thing to really love about your methodology is you include some of your failures and admissions of imperfect successes. It definitely helps us kitchen neophytes who really don't know a lot about what we're doing or how it's supposed to turn out.
Just a thought: if you're making a vegetable soup.. and it has beef or chicken stock.. it's not really a vegetable soup. It's a beef or chicken soup with vegetables in it.
I actually want to try to thicker version 😀😋🍜 looks yummy to me.
Please make Kaiserschmarrn. Why haven't you done Kaiserschmarrn? You totally should do Kaiserschmarrn!
I appreciate the educational purpose of your videos like this one, Chef John. You never needed to show corrections or a remake, just final results. But there was a lesson to be taught. Thanks.
"I quickly realized this was terrible!!" only chef John would admit to it, and turn around and fix the problem. I'll admit it was hilarious.
always honest in you after action report.
failure = learning moment.
Thanks!
I would have liked the thick one better. So I'll be ordering a broccoli pudding next time ;)
Lol!! "Veggie stock- whatever that is." Lol!!
Thank you for showing the mistake and giving a recommended correction. Tried it with your third suggestion, more chicken stock, and cubed day old French bread with the cheese on top and liked the results.
Dice the broccoli a bit more, and don't blend it? With cubes of croutons and cheese on top, you would have lots of textures.
But thick soup is gorgeous!!
Great recipe in the end, will try it, but holy crap that was a roller coaster of voice pitch/inflection. Up and down and up and down and....
I was in Winter Park CO yesterday and it was minus 15 degrees. What I wouldnt do for a bowl of this yesterday or today for that matter :)
6:10 I love how the fact that you said that it's terrible and that you don't like it, but you kept eating it anyways 😂
I'll give this a try even though I've never been a huge fan of Broccoli soup. I mean I really like Broccoli but soup is sort of a "meh" area for me. That said, I will try it. I was unsure about the peruvian turkey and that ended up converting me from "tolerating" turkey for the holidays to full blown loving it or at least that version. That and being honest my sister bought me my first real quality knife for christmas and I'm just looking for excuses to chop things.
I know presentation is important, but if it tastes good, you're doing good!
been watching this channel for a long time and he still kills me . this guy knows humor
i just got married and i would like to make my new husband a traditional Mexican dish since he hasnt been home in 7 years. so my food wish would be how to make traditional tamales or any other Mexican dish to remind him of home please
Heck, I thought the first batch looked yummy, even thick. I would've been satisfied, but that 's why I'm not famous like Chef John.
soupe au (as in OH really?) gra (as in gratifying) tin (as in...idk what sounds like it in English sorry)
"There was no way, I´d let the food win" :D
I want chef john to be person my children take as a role model.
.......that metal spoon angered me....I don't know why.
I'm just not used to it.
wow, i always learn something new from chef john.
today i learn i can chop up and eat the broccoli stem.... i used to throw that away
Love that you showed your mistake and your solution. Thanks for being human!
Looks delish. glad you show us that your human ;)
Looks great!!! I actually like thick broccoli soup 😊
How did you thin out the soup? What did you do to it? :D
Hungry, cold and sleep deprived; if I can only put my hands through the screen and grab the whole pot
I much prefer the thicker version. Especially on cold days.
I think I'd prefer your failure.
We learn the most from our mistakes than we do from our successes.
Glad that you let this be a learning experience and more so that you shared the mistake with us! This was sure to happen to some one and now we have an idea how to prevent "broccoli bread pudding".
the Dan Fouts of my cheese amounts. dude, you kill me. :)
What I love about your videos is how transparent you are with your experimentation, your mistakes, and your results. And of course you have a golden voice. Thanks for the recipe!
Love ur honesty. 2nd version looks amazing! Thanx 💕❤️👍🏽
"Whatever that is", lmao
Oh mon Dieu! cela à l'air tellement délicieux!
It's nice to see you fail. And I mean that in the best way.
I once had cheese & broccoli soup at a restaurant, I then found out that the staff dropped a used dish sponge in it, never ate there again! Just felt the need to share.
Anyway this looks like a great alternative! :D
lol, how did you find out?
The manager's kid (young- 7-10?) was bragging to his friends about how he dropped a 'dirty used dish sponge' in the main soup pot in the kitchen and how his mom (the manager) saw him do it but didn't do anything about it...including not taking the sponge out of the soup, or dumping it out- she let it be served filthy. Good news it that place is closed down now. Health problems ya know?
Hey Chef John, how about doing a Cream of Zucchini Soup?
Chef john cooking in his underwear hahahha
After seeing the first failure, I was already thinking at 6:45 why was he not using smaller square croutons that would make eating much easier. Does that make me smarter chef John?
Chef John I would like to see your take on Pad Thai
Needs bacon bits :)
*sigh* I thought this was going to be broccoli and cheese soup. I need a good recipe for that
