    Discard any broken beans or grit, then rinse the beans and soak them in a bowl or jar of fresh water for 8-12 hours or overnight. Use at least three times as much water as beans.
    2. Cover and store
    Transfer the drained beans to a container, making sure there's no excess water. Cover partially and store in a warm, dark place away from sunlight. You can use a tea towel or mesh bag to keep the beans dark.
    3. Wait
    Depending on the temperature and humidity, your sprouts should be ready to eat in 12 hours to 3 days. You can check after 12 hours, and if you want longer sprouts, you can rinse and drain them, then cover partially and store them again in the dark and warm place. In hot climates, you might need to sprinkle water every few hours.
    4. Harvest
    When the sprouts have little white roots that are about a centimeter long, you can pluck them off and rinse them. You can also continue to let the sprouts grow for another day or so to get longer sprouts.
