Easy Paneer Bhurji (Scrambled Indian Cottage Cheese)- with Vegan Options!

  • Many Indian dishes substitute meat with paneer due to the high protein content. Perfect vegetarian substitution for scrambled eggs and you can find the vegan substitutions below! Hope you give it a try!
    INGREDIENTS:
    -2 Tbsp. Ghee or Oil of choice
    -3 cups Onions, chopped
    -2 cups Tomatoes, chopped
    -2-4 Green Chillis, chopped
    -1 Tbsp. Tomato paste
    -1 tsp. Ginger paste
    -1 tsp. Garlic paste
    -1 1/2 cups Paneer, crumbled
    -1 1/2 cups Frozen Peas
    -1/4 tsp. Carom seeds (ajwain)
    -1/4 tsp. Cumin seeeds (jeera)
    -1 1/2 tsp. Salt
    -1/4 Red Chilli powder
    -1 tsp. Turmeric (haldi)
    -1 1/2 tsp. Garam Masala
    -3/4 to 1 tsp. Amchur Powder
    VEGAN SUBSTITUTIONS:
    To make this vegan, substitute the ghee with oil of your choice and use extra firm tofu instead of paneer. Be sure to drain all of the water from the tofu. Use a paper towel to blot any excess water and crumble it with your hands. Unlike the paneer, you will have to cook the paneer for a little longer to dry any remaining water from the tofu (unless you don't mind it).
