3 tablespoons of olive oil
3 oz. of proscuitto
1/2 large onion minced
2 garlic cloves minced
1 cup basil chopped
1 28 oz. can of tomatoes
1 lb. of pasta of choice
1 tsp. salt
Put up a pot of water for the pasta. When it boils, salt the water and put in the pasta.
In the meantime, heat up the three tablespoons of oil in a separate pot. When it's hot enough put in the proscuitto and saute for a couple of minutes. Add the onions, garlic and basil and saute for another couple of minutes. Add the tomatoes and salt and let cook until the pasta is ready. I usually cook the pasta for 7 minutes for all dente. Certain pastas need more time.

I happened to be making a reservation for dinner at Carmines in NYC because my daughter and I are going to see Russell Crowe perform at the Sony Theater. Guess what I saw on Carmine's menu Pomodoro Sauce made with fresh plum tomatoes, wine, garlic, oil and proscuitto.
