JOLLIBEE FRIED CHICKEN RECIPE | Episode 5 | Pang-Business sa Kanto

    This is the closest Jollibee fried chicken copycat base on my multiple trials. Hope you enjoy this recipe!
    Brine ratio:
    1 liter water
    1-2 tbsp salt
    1/2 cup vinegar or
    2 tbsp baking soda
    (Fridge/Chiller for 1-8 hrs @1-4°celslcius temperature)
    after brining, Rinse(banlawan) your chickens 3-5x in cold water.
    Then drain...

    • JOLLIBEE FRIED Chicken...

    Marination: (2.5-3kg of chicken)
    1 tbsp Garlic powder
    1 tbsp onion powder
    3/4 tbsp Paprika
    1/2 tsp chili powder
    1 tbsp Black pepper
    1/2-1 tbsp Salt(do your own preference)
    _____________________________
    There are different ratios on flour and coatings. check the video on how I execute different methods and techniques. pwede kayong mag experiment ng flour/cornstarch ratio nyo.
    CHICKEN COATING RATIO
    (#1 #2 #3) recipe.
    1 cup flour
    1 cup cornstarch
    1 tbsp Salt or 2-3 tbsp patis
    1.5 tbsp onion powder
    1.5 tbsp Garlic powder
    1 tbsp Paprika
    1 tbsp Black pepper
    1 tsp chili powder
    (optional 5-10% vinegar, tuba or any citrus fruit like kalamansi,orange lemon)
    pwde din mag add ng 5% baking powder for extra crispy sa dry coating or mix Mona sa marination.
    CHICKEN COATING #4
    Plain All purpose flour + water(wet)
    Plain Cornstarch (dry)

    TIPS AND GUIDE:
    -Pwede pong adjust niyo Yung spice powder depends sa taste preference niyo. bawas or dagdag ay ok lang. some spice powder ay nagdadarken ng outer coating, so better watch that out. specialty Ang paprika,garlic,onion,salt..nagpapadarken ng outer coating at mantika niyo.
    -Every Flour and starch have different outcomes. so try to experiment in flour ratios. from 50/50, 60/40, 70/30 ng All purpose flour,tapioca,potato,cornstarch maraming klase ng flour at starch.
    -if you used proper amount of salt sa marination. eh magbawas kana salt sa coating. vice versa nmn pag maraming salt sa coating eh magbawas ka salt sa marination.

    The baking soda acts as sanitizer that kills e-coli or bacteria present in the chicken and the brine solution becomes alkalized aside from tenderizing the meat. You will notice that the solution bubbled because of the addition of baking soda reacting with vinegar.

    makapal at medyo redish ang kulay.malayo sa jollibee....good yong technique mo na 2 cups flour at 1 cup kasi same tayo...pero yong spices compopsition mo hindi ako kumbinsido.kulang sa flakes....makapal ang coat ng harina

    no to baking soda ang pangit ng lasa........ binababad ko lang sa konting tubig na may toyo at may asin ng 30 minutes para mag tender lalambot na yun ........pagkatapos ng 30 minutes itapon ang tubig na may tayo at pahiran ang manok ng pamintang pulbos bago ilagay sa breading... at dapat balance lang ng seasoning sa constarch di ako gumagamit ng flour tumitigas ....... constarch lang at onion and garlic powder ok na......... malambot at masarap parang jollibee

      @shelumielpalma7175 been there and done that..alam ko taste ng baking soda na mapakla at off taste, Lalo na if not properly washed 3-5*...so NASA sainyo po un how you prepare it...if ayaw niyo po ng soda or baking powder...Ang pampalit Dyan is bit of fresh pineapple juice or pineapple meat, Act as tenderizer din yun..👌😁
