PROJECT DESCRIPTION
The researchers will be using the organic wastes of Musa acuminate x balbisiana (‘Saba’ Banana) particularly its pseudo-stem fiber, overripe fruit and its peels as eco-friendly and organic food products. The banana pseudo-stem fiber will be turned into eco-friendly paper bags. Its overripe fruits together with its peels will be fermented into vinegar. To find out the effectiveness of an eco- friendly paper bag, test will be conducted using durability and absorbent tests. On the other hand, taste test will be conducted by some selected respondents for vinegar and other products. As for vinegar product, acidity test using pH meter will be conducted to compare the acidity of overripe banana from banana peels. This study deals with the determination of producing paper bag, vinegar and banana jam out of ‘Saba’ banana. The pseudo-stem fiber of banana and over ripe fruits are taken mostly in Sitio Ilaya, Bakhaw Norte, Kalibo, Aklan, Philippines. This particular site is one of the places in Aklan most badly destroyed by typhoon Paeng last October 27, 2022. Because of this, the researchers will be utilizing this fruit crop according to its availability and affordability as the major material for this project.

Hi! Sorry for the late reply. We had used Sensory Evaluation in determining the acceptability of banana fruit vinegar and banana peel vinegar. As well as in banana fruit vinegar as used in condiments for atsara. We also used ph test for both vinegars and tear test for banana paper bag. Hope it helps 🙂
