Cory responds ever so nervously because he spent the entire night chatting it up with Lauren (who has mentioned that she "likes" him) and he is feeling guilty about it (he may have some feelings for her as well).

It was most definitely Cory's fault. I have heard people say that it was all on Lauren but if you really look at it it was Cory who welcomed it.
It was not Cory's fault. Did you watch the entire episode? Had Lauren not kissed him unwantedly, he would have never had to worry about her following him back to his home town, and surprising him at Chubby's. However, had he not gone on a separate date with Lauren, then his relationship with Topanga would have been restored a lot sooner.
Cory emotionally cheated on Topanga and gave Lauren a false sense of them ever happening when he lied about his ankle hurting to spend more time with her. So, yes, Cory is at fault.
I was really rooting for Lauren even though I liked Topanga!

College is even better to date around. More ppl from diverse backgrounds instead of one city where your high school resides

You know, I think I might have met a special someone too. She used to work at the bakery I go to a lot, and we connected very well. On her last day, she said my coffee was on her (I'll bet to pay me back for the candy I got her and her crew as a Christmas present last year). I ran into her at a bar, and she had me sing with her and her friends during karaoke.
