    200g (7oz) dark brown sugar
    200g (7oz) unsalted butter
    4 medium eggs
    225g (8oz) plain all-purpose flour
    1/4 tsp salt
    1/2 tsp mixed spice
    1/2 tsp cinnamon
    110g (4oz) ground almonds
    75 ml milk
    75 ml brandy
    1/4 tsp vanilla extract
    2 tbsp black treacle/molasses
    800g (28oz) mixed fruit glacé cherries, currants, sultanas, raisins
    1 tbsp marmalade
    Mixed spice
    1 tbsp cinnamon
    1 tsp Nutmeg
    1 tsp allspice
    1 tsp ginger
    1/2 tsp cloves
    1/2 tsp coriander
    8-inch spring form tin

    That cake wrapped up in tinfoil looks EXACTLY like Christmas to me ! When I was a kid my mum would make her Christmas cakes and puddings at the beginning of November and wrap them all up in parchment and tinfoil and leave them in our spare back bedroom. That's where she stored extra food tins and UHT milk etc (a hangover from her experience during rationing) and I would walk in and see a pile of tinfoil-wrapped deliciousness and know that Christmas was coming and I would get to eat pudding and cake made expertly and with love.
    Now that she is gone it is one of my happiest memories and I make cakes and puddings at Christmas and shed a little tear thinking of those tinfoil wrapped cakes x

      Well done! Folks are terrified in case they become ill. When I was a kid and watched mum baking she always let us have a tsp, and we could go round the bowl and never had a day's illness. Memories. Best, Rik

      @@BackyardChef Oh yes the memoires. My mother always let us lick the cake batter left over in the bowl. And one time in my 30s ( even that was 20 years ago), I licked so much cake batter, I was only able to cook one layer!!!! LOLOLOL But all memories of my wonderful dear Mother (RIP). Christmas is still a bit sad without her. She passed during the horrible COVID times in 2020. But I do it up very special for Christmas every year in her honor. And blessings to you!!

      Eh, come on! We are all living life, aren't we? Ha ha ha. Those that really live here know most of the things here are equivalent to the prices in the West - that could be a factor why there aren't many tourists - it's not been a cheap place for 10 years. 20 years ago, it definitely was.       Yes I have about 25 years ago. Might have a go at that. Its just a little time consuming between rises. Its the time of year for it - Christmas / new year. I will actually see if i can squeeze it in somewhere - can't promise but will see. Best, Rik

      I have used good old elbow work with washing up detergent, I have used the old fashioned way of baking powder and have used Mr Muscule - to be honest you really have to keep on top of it. Best, Rik

      @@BackyardChef I try to keep on top of it but I have a damaged back and that makes it difficult to really scrub. I will try Mr Muscle and I am glad to know that my bicarb is something you have also tried (so I have confirmation it is ok to use on this oven) Merry Christmas and happy New Year to you and yours

    Airfryers are not created equal. While this cake works well in this type of oven, it wont as well in the type which has a slide in basket. I have tried making cakes in a round tin in a basket type and its difficult to get it cooked evenly. They overcook on the outer while the middle stays undercooked. I have yet to try in a ring tin which would allow the heat to spread out from the funnel.

      Check out Butlers empire. They make one in the basket air fryer and it came out great. But I did need to cover it for half the cooking time as the top was very brown.

    I'm surprised there was no raising agent at all - is that right?

The key ingredients in a traditional Christmas cake are flour, eggs, and mixed dried fruits (such as raisins, currants, cherries, and citrus peel). The reasons for not using a raising agent are:
      1. Dense Texture: The primary feature of a Christmas cake is its dense, rich texture. This is achieved through the heavy proportion of dried fruits and nuts. Raising agents like baking powder or soda would make the cake lighter and fluffier, which is not desired in this type of cake.
      2. Eggs for Structure: Eggs are used not only for binding but also to provide some lift and structure to the cake. The proteins in eggs help to set the cake as it bakes, compensating to some extent for the absence of a chemical leaver.
