Their grammar and spelling was wild. Forget 'thou' or 'thee', even words we use today had completely different meanings associated with them like how 'cake' was often used instead of 'bread'. Pronounciation was also different. (Shakespeare's name might have been pronounced SHYEKS not SHAYKS) I highly recommend authors like Chaucer for Middle English, their cadence back then was so cool.
The medieval style is from all of Europe, but music and arts were more prevalent in the South of Europe, that has Arabic essences since some of the southern European countries were invaded by the Moors (Morocco, Argelia etc.) (before some of them were even considered countries).
