    Who else out there loves a good sweet but has to limit their sugar consumption? If I'm describin' you, I think you'll like this one, my friends!

      Type 2 diabetes can be reversed through a low carb diet and intermittent fasting. Check out Dr. Jason Fung here on youtube. Paula is the first well known cook to use sugar alcohols (monkfruit sweetener ) that I have encountered. Hope she continues to experiment with sugar alcohols and reverses her disease. The cookies that contain flour and the bananas themselves would probably put one over the daily carb limit, but I could use a banana flavoring and use an almond flour cookie made with a sugar alcohol. Keto cooking is a lot of work and can be expensive...but health is priceless.

      I started making my banana pudding this way about 20 years ago. I still miss the old way alot , but everyone now seems to love this one ! ( Of course, they're all too young to remember the good old one 😉) (p.s. , Y'all be careful and don't go back too many times for desserts made with monkfruit sweetener, wooo doggies, it'll give yuns the " backyard trots"! 😆)

    We ate at your restaurant in PCB last month and it was a wonderful experience! The staff are a joy and the food was great.

    Will have to try this! One thing my Grandmother did was to fold in some whipped egg whites to make B pudding fluffier. We get Kroger Carbmaster milk , low carb, sugar, fat and high protein that we can use for something like this. My wife had a diabetic attack lady fall & almost died , Blood sugar over 1000! We didn’t know she was diabetic. Eating healthy has changed things but I’ve lost over 50 lbs ( my wife was almost at ideal weight when she got sick). We have so many friends that have found out recently they are diabetic! Thanks for a healthier option, do more please, food can be so boring now!

    My mom was raised in a southern home and banana pudding was their go-to dessert. She topped the pudding with meringue and I could eat the whole dish by myself. Yummy!

    Monk fruit is a wonderful choice. Stevia is great too but make sure it’s Pure nothing added. Thank you dear wonderful Paula for telling people about this❤️😘🥰👍👍👍👍👍❤️

    Paula,
    Save your banana peels in the freezer, when you have a whole lot, put in blender with some water. Pour at base of roses and they will bloom so pretty for you.

      Great suggestion! I've also heard, if you place banana peels on the heel and bottom of your feet, put on socks and go to bed, your feet will be soft as a baby's bottom the next morning.

    Ty 😊❤️ plz keep more healthy recipes coming. I have type 2 diabetes also had gastro sleeve surgery lost 178 labs. But due to the diabetes I have an incesion that won't heal from hip replacement surgery. I have to really watch what I eat. 🙏 💕

    Omg. Love me some Banana Pudding. Have you ever had Banana Pudding ice cream?? I'm not a big ice cream fan. I like 3 kinds. Vanilla, Chocolate and Mint Chocolate Chip. Not into the crazy mixes. That was until I went camping and the camp store had Hersheys Banana Pudding ice cream. It is like heaven in the mouth. Lol. It's an absolute must try. It's my favorite ice cream for sure. It's hard to get though. 😪

    I one time had brought the most amazing banana pudding I made to a New Years eve party, those there were not adventurous eaters (up North Where banana pudding is not too common ), no one at the party even tried it. But that was ok because I bought it back home so more for us!

    Although I am not a diabetic I have several friends who are. I plan to share this recipe with these friends. It’s difficult to stick to a diet that doesn’t contain dessert, and other sweets, so this recipe will help these ladies (and gentlemen). Thanks much for sharing this recipe, Paula!

    malt ball fudge cake
    Betty Crocker™ Super Moist™ Chocolate Fudge Cake Mix 1 following instructions on box i replace the oil wth butter in my cake
    Jell-O Chocolate Fudge Sugar Free & Fat Free Instant Pudding & Pie Filling Mix, 1.4 oz 2 boxes Box use 1/2 the milk this is your frosting foe the middle between the cakes
    Pillsbury Creamy Supreme Sugar Free Chocolate Fudge frosting 2 if you like alot frosting
    WHOPPERS, Malted Milk Balls Candy, Bulk, 12 oz 1 or 2 boxes to place and push into the pudding layer between layers of cake and on top to taste if you like maraschino cherry with the WHOPPERS is yummy ans the suger count not to bad
    to taste if you like put dollops of whipped cream around the top of the cake wth a maraschino cherry on each dollop

      I do not like any of the sweeteners, they are just plain nasty. I have 2 things of monk fruit, and i will have to try this I am a diabetic, and it is so HARD but I have been eating just a little sugar and I know I am not SUPPOSED to have it. I know alot of people are addicted to drugs, I am a sugar addict. LOL

    Thanks for this. We do keto n love monkfruit. Its definitely great. We are just going to sub out skim milk for heavy cream since high fat low carb is better for glucose and reversing insulin resistance (contrary to popular belief). Will have to use banana extract instead too for less sugar n make my own shortbread keto cookies. You base is perfect though. Thank you.

    Miss Paula, I live in an apartment building where there are a number (like 60-75%) of people who are diabetic. I love to make things to share with whoever wants some. The problem I have is finding recipes to swap out regular sugar and use fake sugar and still have the same flavour. What recipes would you suggest I try? Thanks bunches for the help!! 🤗🤗

      It’s great that you made the pudding with monk fruit and used low carb cookies but this is not a dessert that’s low carb! Important to point this out to new diabetics!

    Just FYI this recipe has a total of 112g of carbs when counting the bananas, milk, and corn starch. I didn't account for the cookies because while they might be sugar free they might not be carb free which is the same thing as sugar for diabetics. If you get 12 servings out of this it comes out to 9g per serving. Let's be real. Most people would eat more than one serving. Just a heads up out there to other type 2 diabetics. I don't think this is low sugar friendly. If you replaced the milk with diluted heavy cream and replaced the corn starch with a sugar friendly thickener like xanthum gum then the sugar count would be much lower. You can make sugar free cookies at home by combining almond flour, egg yolks, butter, and artificial sweetner. Combine and put on baking sheet at 350 for 8 to 10 mins.

      Thank you Tom for doing the macros and hope that just because she put it out there for diabetics....it is okay to consume. People don't equate sugar and carbs which is the real threat to A1C levels

      @@sherryrethwisch9589 yeah it makes me worried when I see all these type 2 diabetics in the comments saying they're going to cook this recipe when it's bad for them. I don't think Paula and her team are doing this maliciously it's just a lack of knowledge and reading labels and understanding the relationship of carbs and sugars. You can't just believe something is low sugar just because someone says it is. I don't like to complain just to complain though. That's why I offered safer alternatives. The idea of what is healthy in the south vs what is actually healthy can be vastly different. Battering a vegetable pretty much negates any health benefits of eating said vegetable for example.

      @@babss943 well to be fair it's 112g for the whole thing. You'd have to eat the whole dish to get that many carbs. Three servings would be 27g which is too much for most t2 diabetics who are eating low carb/sugar. I just wish content creators would do a better job of telling people what is low sugar because they will take you at face value. They could wind up putting someone in the hospital or killing them..

    I have a confession to make, I am addicted to SUGAR. I love desserts, and I am a scratch baker. I never use cake mix. I grew up eating good desserts. I found out I am a diabetic in October, and it has been so hard. I have been trying the sweeteners and some of them are just AWFUL. I do have Monk Fruit, and use it for my tea, no, I just can not give up my tea. I have been making desserts and just eat in moderation and I KNOW i am not hurting no one but myself when I eat something I am NOT supposed to have. I love Banana Pudding, and I am going to have to make this. It is so hard to find a decent dessert for a diabetic. Thank you so much Paula for posting this dessert. I love the cooked pudding for a banana pudding, never instant for me. I even make my own vanilla flavoring, have not bought vanilla flavoring at the store in 13 years. I wish you would make more sugar free desserts for SUGAR ADDICTS LIKE ME...LOL Love you Paula. I am going to get me some of those cookies too, I LOVE shortbread, well, what kind of sweets do I not like. A diabetic is a real challenge for someone like me. It is so depressing because I love good desserts.

      Robin you took the words right out of my mouth! I am right there with you exactly, I love my deserts I'm addicted to sugar. I'm also a diabetic and you're right it's hard to find good desserts that are sugar free. I've been watching Myra at low-carb love and she makes some really good sugar-free desserts! I've also learned from testing it on myself and from experience that if I drink organic apple cider vinegar with the mother 1 tbsp mixed with 8 oz of water and you can mix either Torani sugar-free flavoring syrup or artificial sugar with the apple cider vinegar. Drink it right before you eat a dessert that's not sugar free. It will help your blood sugar not to rise! I take a dose of it everyday before I eat and it also helps with carbs, any kind of carbs especially if you eat pasta! ACV has also help me drop some weight! I'm telling you it's fantastic!! I hope this has helped you the way it has helped me. Test the theory out for yourself. Right back to me and let me know. I would test my sugar exactly 2 hours after I would eat my meal plus my sweet dessert and I kid you not my sugar level would not go sky-high! Oh one more thing I have not tried monkfruit but I do use swerve. It's really good and it's easy on the digestive system and it does not give you diarrhea. It's gluten-free GMO free Google it and it will tell you all about it...Swerve they haven't and granular and powdered sugar form.

    High Key makes a sugar free vanilla wafer and Jello makes a sugar free banana pudding. Bananas have lots of natural sugar so I avoid them altogether and would add strawberries or blue berries instead. Makes a delightful light dessert and no fuss over the stove

    I use the splenda for baking and learned how to make it in the microwave instead of stove top. Keeps from standing over the heat in the summer time. I will be trying the sugar free shortbread next time.

    Try cooking the custard in the microwave. Takes maybe 4 to 5 minutes. Can’t tell the difference. I make custard this way all the time.

      @@marywhite8517 Start it off 2 minutes on high. Stir and cook 2 more minutes. Check for the thickness of the custard. Cook in one minute intervals til u have the thickness u desire, usually 4 to 5 total minutes depending on your microwave.

    I buy a stevia and monk fruit combo by the 5 lb bag. It’s not cheap, but I don’t have to miss out on baked treats.

    For me, I like banana flavored things that use real bananas in them. I do not like artificial banana flavoring that is used to make banana flavored candy for example. Although monk fruit is a great sweetener, it can be a little expensive. Monk fruit is worth it if you use it often.

    I cheat and use the sugar free vanilla pudding, sour cream and sugar free cool whip. Not sure if the measurements because I don’t have in front of me lol Got the recipe from my father in-laws diabetic dr. It’s really one of our favorites.

    The only way I make banana pudding is Paula's, Not yo mammas nana pudding, so rich and so good. But, much like any other desserts I only make it for special occasions.

    Never understood -- why isnt some pureed banana added to the pudding mixture while it's cooking? Would think this would really intensify the banana flavor of the pudding versus just having sliced bananas sitting in vanilla pudding? Also -- I always mix the egg yolks directly into the cold mixture then heat it up -- no need for the tempering step and it tastes no different.

    skim milk is loaded with sugar, would be better to use heavy whipping cream. it's the sugar that is bad for type 2 diabetics.

    Bananas have a lot of natural sugar in them. So, if you really want it to be sugar-free, Use banana extract instead. Do not use banana flavoring. It will not taste right.

    Yuck, why would you put all those cookies on there. Lo cal or not defeats the purpose. One layer broken up some would have been enough. Maybe instead of just throwing something out there you try it first. Wasn't very complimentary indicating the cookies wouldn't be your first choice.
