I cook this recipe almost exactly like you do except, I parboil the oxtail to rid of the scum,then wash.I also toast bigas until brown,then blend. It somehow add a toasted flavor to the dish. Overall,your Kare-Kare looks so yummy. Misis must be so happy!
Oxtail kasi may gelatinous content perfect for umami and thick-based dishes like kare² and stew. Pero dto sa pilipinas, none of those ay pinahahalagahan, basta mkpag luto lng.. minsan nga tlga, nakka inggit magluto pag kumpleto ka tlga sa ingredients...

Youre wasting what is supposed to be the base of your dish, (beef stock). Yun ang primary ingredient for flavor. Its better than using broth cubes or MSG. Its my opinion lng nman, we respect each others differences. And we dont have the right to say others are wrong, kasi we dont have the same circumstances and achievements in life. You can suggest, but not point your opinion is right above all.
