A tip ;-) When you cook your caramel, use a brush soaked in water and brush the sides of your pan where the sugar cristallize, it will dissolve it it and won't make a burnt crust that might give a bad bitter flavor to your caramel ^^
Sticky toffee pudding has to be one of if not THE favorite dessert for my family. And yes, with a small scoop of vanilla ice cream, makes this dessert melt in your mouth. SO good!!

it is also possible to rehydrate the dattes in some black tea, instead of coffee. I love this cake, it is like molecular cuisine to me, a little magic !

Do you understand the purpose of soaking the dates baking soda. It shouldn't assist raising as soda activates with water and so it will be exhausted by the time it goes into the batter. Does it soften the dates, or is it one of those oddities of cooking that we keep doing even though we don't know why?

We cannot get caster sugar here. Would icing sugar do?
Caster sugar is just regular sugar, and you have to use that to make caramel. Icing sugar won't work.
