Don't give up! The key is proper lighting, temperature and nutrients level. Best temperature for lettuce is 65-70F. 5 ml per gallon of water if you use AeroGarden plant food. 1 gallon per plant, don't refill.
I wonder if the stronger taste is from the sunlight? I notice with my microgreens the taste is really strong when I grow in natural light. I prefer the taste of microgreens grown under grow light.

Do you ever notice a little burn from hydro ones? I get a chemically aftertaste from my 6 red lettuce plants in soil under lights. Probably because they’re unhappy. I’m still learning
The hydro method uses less water as none drains off to be wasted, all water used in hydro is consumed by plant, possibly a small amount in evaporation.
Try this - 1 tsp Maxigrow per gallon water for sprouts, 2 tsp per gal for plants with 6+ leaves. Don’t totally cover the roots, leave 1/2” for them to breathe. For a mason jar, check the water level weekly and top off your mix as needed (to 1/2” below your net pot). If you use a 3-5 gallon bucket, you can set it and forget it for 30 days. If you harvest only external lettuce leaves it will keep growing new leaves from the middle. I am testing this now to see how long I can harvest the lettuce before it starts to bolt.
I think the nutrient solution can affect the taste: different nutrients content may give different result. Maybe you can run a test with different type/brand of nutrient solution. Or higher concentration..
I think for most Vietnamese people, lettuce is used as a vehicle for foods - it's used to wrap things like banh xeo, cha gio, etc., in so it makes sense to keep it bland so it doesn't compete against all the other herbs and flavors. That could be why you like the blander version better.

In fact, at the level of essential plant nutrients, they can’t tell the difference between organic and inorganic fertilizers. For example, plants can only absorb nitrogen as nitrate (NO3-) ions or ammonium (NH4 +) ions-both of which are inorganic forms. When a plant is fertilized with manure or compost where nitrogen is still in its organic form, it’s unavailable to the plant until it is converted into inorganic forms through a process called mineralization. Inorganic fertilizers bypass the mineralization process because their nutrients are already in plant-usable forms. Most of these fertilizers are water-soluble, and plants can absorb their nutrients immediately. The Element Table lists all the nutrients a plant requires.

Get a ppm meter try to keep it around 800 and ph from 5.7 to 6.8. I use general hydroponics flora series. 5ml of all 3 and 5 ml of cal mag.

I find my Kratky lettuce is cleaner and I have no pest in my indoor tent. Thant is why I like this method the best.
