Nice video. I’m trying to practice choral harmonizations but I’m having to look at chord charts for every key. How do you visualize the intervals? On a keyboard or by memory?
I’m trying to transition from guitar to keyboard/Common practice period so I have a lot to learn

The short answer is "Both and more".
It's years and years of training, a genuine interest for theory and constant practice.
Never lose sight of the reality of sound, otherwise it's all abstract 😄
All the best in your musical journey

I realized you are writing minor and major in a same way. What I mean is, as I know majors written as III (3rd degree) but minors are iii (also 3rd degree). Is this a differet way of writing?

      Your observation is correct.
I am aware that the most commonly used system of harmonic analysis uses lowercase to indicate minor triads.
I use lowercase to indicate borrowings from the minor / modal interchange. While some labelling might coincide, others don't:
Key of C: F major = IV in extended Roman, F minor = iv
      G major = V, G minor = v
      those coincide, however:
Bb major = bVII while I would label it vii, "Seven from the minor"
I'd label an E minor triad III, and an Eb major triad iii (three from the minor)
I prefer using this system because when it comes to working with keys on the sharp side of the circle of fifths the labelling of borrowings from the minor might be confusing: extended roman will label them bVII, bVI etc, but there's no flats in those instances, there's naturals 🙂 (Key of A major, a G major triad would be labeled bVII, I'd label it vii "Seven from the minor", my objection being "Where's the flat"?)
Anyway that's all academia: once you get a good grasp of harmony any system is good and all systems have their flaws, and I often switch to whichever my students are more comfortable with OR need for their exams. Personally I think a system must convey the most amount of information using the fewest possible elements, and to add a lowercase / uppercase discriminator for major / minor appears redundant to me ;-) I know that chord III is minor, I don't need an extra element in the chord labelling to show that, if it makes sense...
Thing is: I do these analyses not to tell people how it's done and neither for my students. This is just me and the tools at my disposal taking a look as deep as I can manage into the genius of JS Bach in the hope of enhancing my understanding, uploading for everyone's benefit should it turn out useful to even one person.
Therefore I choose to use the tools I feel most comfortable with, and I accept that it is not the system most people use.
      I hope I haven't created more confusion than I cleared 😀
