That's very interesting. Are you in the US? It's common for people in the US to shoot RH apparently because they learned to swing a baseball bat that way before playing hockey. Awesome that you found your best handed Ness!

I guess I just went with it? So now, my dilemma is to learn how to stickhandle with the RH, or undo all my training and try to re-learn with LH!
As a training aid, grab some short pvc pipe (enough for your hand to grab onto) and slide it over the shaft of your stick. Your bottom hand will grab this. This forces you to train your top hand to have strength and your mind to acquire the muscle memory to do that motion more naturally. It’ll be frustrating how much you relied on your bottom hand (“chopping onions”) but even a good hard afternoon of this and you will start to feel the difference. Keep the puck largely closer to your heel. Watch Patrick Kane as he’s famously going through the scattered puck drill (or anywhere else) it’s all top hand and the puck is glued to his heel unless he’s doing a toe drag or something else like reaching
Temporarily, you can get that feeling quickly by slipping the cardboard from an empty toilet paper or paper towel roll over your stick and gripping it loosely with your bottom hand. Of course, it’s flimsy and won’t last long, hence the reason you’d want hard plastic as a more permanent training aid. In a way, it forces you to use your bottom hand even less because it’s more fragile
So you do want to coordinate your legs and hands? What about all of those McDavid videos where he is dedicated to breaking the dependence between legs and hands? Or maybe I misunderstood that...?
My dominant hand is my right hand but for years I have been a right handed shooter. Should I retrain myself to have dominant hand on top and change to left handed shooter?
You can bend your knees slightly an legs wider to stick handle easier. You sadly can't run using the same mechanics to stick handle easier. Yes what he showed is great for ice hockey. When trying to figure out the best way to stick handle doing street hockey stand stationary and make proper adjustments so you can effectively stick handle while running. Once you get basic mechanics down try running once skills develop to stick handle while running. As I stated stand stationary and make proper adjustments with the left hand because the left hand gives direction to the puck. Right hand gently close for further speed power and control. Always keep the right hand loose and top hand snug not so tight that hand fatigues and wrist locks up.
