How To Make Taiwanese Fried Chicken by Bao Bei

  • Taiwanese Fried Chicken is a staple in the Night Market scene. It's crispy, juicy and exploding with flavor! It's easy to make and so delicious. Not too many ingredients. The Bao Bei Recipe is the only one you'll need. Learn the best way to make these from square one. Add Taiwanese and Chinese cuisine into your cookbook
    Recipe
    Chicken ( 1 lb in dark or white meat)
    Egg (1 small)
    Thai Basil ( handful )
    Soy Paste ( 1.5 Tbl)
    Shaoxing Wine ( 1/2 tbl)
    Water (1/4 cup)
    White Pepper (1 tsp)
    Five Spice (1 tsp)
    Sweet Potato Starch (1/2 cup)
    Spices
    Salt (1 tsp)
    White Pepper (1 tsp)
    Cayenne pepper (1 tsp)
    Sichuan pepper (1 tsp)
    1. Cut Chicken into Bite size pieces, debone first if necessary. Mix in marinade with Soy paste, wine, white pepper and five spice. After it's mixed beat the water into the chicken until fully absorbed. Let marinade for 24 hours
    2. Take Chicken out of fridge and add one beaten egg and mix until all pieces are evenly coated. Dip the chicken in the Starch and move around until coated well.
    3. Fry Chickens on a medium heat for 4-5 minutes, carefully putting them in the oil a few at a time, do not overcrowd the pan. Take back out
    4. Re-heat oil on medium heat then add chicken back in for another 3 minutes. In the last minute throw in the basil, once they begin to curl up it's complete.
    5. Take out and top off with the mixture of spices, amount is based on your own taste.
    Done! Simple and incredibly delicious Taiwanese Fried Chicken.

      I used the spice mixture that was created in the beginning of the video! mix of salt, cayenne, sichuan pepper and white pepper

      I get all my starch from the local asian grocery store, its a very common item if you have one around you! If you don't there are a few links on amazon and ebay i was able to find for you. www.amazon.com/Sweet-Potato-Starch-Powder-Thick/dp/B07L61PF36?th=1 These brands all look quite credible and as long as its a thick starch there shouldn't be any issues. However buying them online is much more expensive >.

      Hello! Mmm sweet potato starch really is the best choice but you can also use corn starch or tapioca starch

    Hey can u tell me the brand or a brand of soy paste I haven't check my grocery stores but my Asian selection is pretty limited. Or can u recommend a substitute for it? I'll more then likely have to order it online

      I use Kimlam Soy Paste which is probably very expensive online, super cheap in stores thou. As a substitute, you can just use a little bit less soy sauce and 1/2 tsp of sugar. Also if you have Oyster sauce, add that in the mix as well 💖
