There is an easier way to make it have the triangle or diamond shape...when stitching the bottom, fold it in the opposite direction of the top. No need to make the pleats, so it's a bit less sewing through less thicknesses. I have a very old commercial pattern that made them that way but without a lining. Also, I insert a small tab at the bottom of the zipper to make it easier to hold when closing. Your video is a clear tutorial of how to make this. Congratulations.

The method for adjusting the size of each bag is different, there is no fixed rule. It depends on the shape of that bag.
