Old 100 year old Tyrolean recipe! Austrian recipe with berries on shortcrust pastry.

- Hello friends! Today I will show you a 100 year old Tyrolean cake recipe.
This Austrian cake is very easy to make.
Cream combined with berries and fruits is something incredible!
Such a cake can be made both in summer from fresh berries, and in winter from frozen or canned fruits.
The main thing is to cook with joy and love!
Ingredients (for a 22-24 cm casserole dish):
1 egg.
50 grams of sugar.
Mix well until the sugar has completely dissolved.
100g melted butter.
Sift 220 g flour.
Add 1 teaspoon of baking powder.
Mix all ingredients.
Knead the dough in a bowl.
The dough should be the same as I showed.
Grease a casserole dish with butter.
Lay out and shape the test form as I show.
Repeat after me.
Prick the dough with a fork.
Bake the bottom of the cake in the oven at 180ºC for about 15 minutes.
2 egg yolks.
30 grams of sugar.
2 tablespoons flour.
A pinch of vanilla.
1-2 tablespoons powdered milk (optional).
300-350ml milk.
I added milk 2 times.
Mix well.
Cook over low heat until the mass thickens.
It is very important to stir constantly.
Add 10-20 g butter.
Cover with cling film and let cool.
1 tablespoon of gelatin + 50 ml of water.
Mix well.
550 g frozen berries or fruit.
Fresh berries need a little less.
Drain the juice from the berries after thawing.
You can use grapes, cherries or peaches.
Add some water.
Add gelatin.
1 tablespoon of sugar.
We got 250-280 ml of juice.
Pour the cooled mixture onto the bottom of the cake.
Repeat after me.
We spread the berries on the cake.
I opted for some raspberries.
We spread the seedless grapes.
Fill the pie with gelatin juice.
All that's left is to put the cake in the fridge and wait for the gelatin to set.

That's delicious! Being in New Zealand, I use slices of kiwi fruit with tinned apricot halves, & fill the gaps with berries. I use arrowroot (tapioca starch) & the apricot juice to make a clear gelatinous toping. It has the same sweet-and-sour mix. If I don't have enough time, I make the base from flakey pastry, which makes a less sweet, crispy base

думаю что если пирог не в холодильник поставить а на 20 минут в горячую духовку то вкус будет божественный и лучше чем из холодильника так как ягоды и фрукты с песочным тестом вкуснее когда их немного или проварить или запечь тогда они отдают весь аромат и вкус. А вот с бисквитом да хорошо подходят свежие ягоды.
