    I can’t thank you enough Donal! I have never attempted anything like this and after searching lots of fussy recipes I saw this and made it today. I just winged it with the quantity of ingredients and copied what you did but added 2 garlic cloves. I thought the stuffing was going to be dry but it moistens as the meat cooks and juices run through. It was so loved by everyone. I am going to make this again next Christmas but I will prepare it day before. THANK YOU SO MUCH 😊 PS. My son said he wouldn’t be eating it...guess what? He was the first to try it and said it was the best roast I had ever made!

    I'm thinking of doing one for Easter dinner, but using a cajun rub and cooking it in a presure cooker, above a apple or orange type of juice maybe a mix
    I might stuff it with Italian bread crumbs mixed with butter orng juice and zest as well as lemon zest . Serve with roasted carrots and potatoes, and cranberry sause then make a gravy with the orng juice and drippings.
    The sweet and heat pair very well.

    I've just never tasted Turkey in my life since it's not a common ingredient here in Korea. Is it better than chicken..?

      I prefer turkey to chicken. But no they don't taste similar but they are also not that different.

      Donal Skehan Hey Donal - Tried ur recipe for Easy Roast Rolled Turkey Breast on Christmas Day. It was Awesome.
      I used rosemary instead of the sage and parsley that you used in ur recipe, I love the taste of rosemary in my cooking it turned out Great. Got lots of compliments!

      Takes a few times to get it right but once you've done it's a great method you can use for lots of different meats! :)

    This recipe is just the best I’ve made it 4 times already once tonight and man it’s soooooo good. The flavor the tenderness yum! This was an amazing treat for New Years and my whole family loved it! I go back time and time again because it’s quite easy and makes a lot of Turkey. This is now the only turkey I make for thanksgiving and a daily treat during the year too it’s just sooooo good. I dump tons of extra stuffing it because to me you can never have enough stuffing! 10/10 I love this dude. If anyone has recommendations for more dishes like this that are good pls comment them.

      +omfug no you don't need to, just let the onion cool slightly before making the stuffing.

    Can you tell the recipe for those honey and sesame carrots? Also what can I use other than Maple syrup since I cannot get it here :) Also Merry Christmas Donal *HUGS :D

      Honey & Soy Sesame Carrots
      Of course these carrots could also be roasted in the oven in the glaze but Christmas is a time when oven space is often at a premium so I’ve decided to blanch them first and then finish them in a hot wok.
      Serves 6
      300g baby carrots, trimmed (each about 12.5cm)
      1 tbsp sunflower or rapeseed oil
      good knob of butter
      2 tablespoons soy sauce
      2 tablespoons honey
      1 teaspoon chopped fresh Italian parsley
      1 teaspoon toasted sesame seeds
      sea salt
      Place the carrots in a pan of boiling salted water and blanch until almost but not quite tender - 3-4 minutes is about right. Drain and refresh under cold running water.
      Heat a large wok or sauté pan. Add the oil and allow to heat through. Add the butter and once it stops sizzling tip in the carrots. Drizzle over the honey and soy sauce, tossing to coat in an even glaze. Continue to and sauté for another few minutes until the carrots are heated through and nicely glazed.
      Remove from the heat and scatter over the parsley and sesame seeds. Give the whole thing another couple of tosses and tip into a warmed serving dish. These can be kept warm in a low oven covered with cling film.

      Donal Skehan Donal! Check this cool recipe from my blog. It starts off with egg whites and you add saltines, sugar and walnuts. Top it with cream cheese frosting and marshamallows then strawberries or mango. It's amazing. Would love to see you give it a try.
