Not Nigerian but have lived there off and on for 30 years. The problem with Nigerian food is that true authentic dishes are eaten by hand on a large platter divided into sections. Americans are picky and want everything to look and taste Westernized so in order for these foods to appeal to us it would need to be reinvented heavily, which takes away the true culture and traditions. It's colonization through the culinary experience
