I ordered mine, spoke to Steve at Mugnaini and just waiting for my Red 75 to get shipped to New York City!! I’m getting decent results with so so ovens, this one should prove different, especially with its awesome retained heat ability!! I will let you know.
OMG, this is a Valoriani not a Mugnaini, Mugnaini is the distributor and uses the inside bricks made by Valoriani for their own ovens. VALORIANI IS ONE OF THE BEST IN ITALY! IF NOT THE WORLD!!!!!! Read about the 100 year old company Valoriani!!! This oven is used in the schools in Naples to teach how to become an approved Pizzaiolo!! Holy smokes!! This is an all 100% pro oven, my pizzas are coming out amazingly with Caputo dough, Ciao tomatoes!! THIS IS TOP OF THE LINE AND THEIR BIGGER OVENS ARE IN THE BEST RESTAURANTS IN THE WORLD. IT IS OFFICIALLY APPROVED BY AVPN (Associazione Verace Pizza Napoletana). I did not realize this until people in NYC were visiting and freaking out that it was a Valoriani! And the pies were looking and tasting way better than normal pies using other ovens!! A Mugnaini oven is owned by Guy Fieri and he notes its the best piece of cooking equipment he owns. Technically, Mugnaini are just as good as Valoriani because the insides are Valoriani! bricks!
@@soloM81 hi, thats a great oven, it gets very hot, great for Napoletana pizza, but the dome is steel, a big no no to retain heat. I almost bought the Zio Ciro 80cm, all brick, made in Italy. A better oven. Both are expensive, but I’ll never go steel dome, thats just me! I have both gas and wood in the Valoriani. Vito Iacopelli on RUclips owns Zio Ciro in his home and is a recognized master pizzaiolo. Im just a an obsessed pizza maker who happened to get one of the best ovens without realizing it.
I cant believe everyone is complaining about the cost, you know this isnt a bbq right? This is high quality, made in italy and will last forever.... Home Depot used to sell one for $1,000 i think made in China, see how long that lasts you!
Floor temp needs to be ~850 at least...700 if that is all it will do must mean there is little thermal mass and insulation. The pizza they pulled out in the video looks about what I could get from a electric range oven with a pizza stone.

THIS IS A VALORIANI IMPORTED BY MUGNAINI, THIS IS ONE OF THE BEST OVENS IN THE WORLD AND NOT BECAUSE I SAID SO. IT IS ONE OF THE FEW OVENS IN THE WORLD APPROVED BY THE ASSOCIAZIONE VERACE PIZZA NAPOLETANA.

For the portable 80 model with gas, what is largest diameter pizza that it can accommodate?
Compare to the piccolo 80, how much smaller is the internal dimension? About heat retention, once fired, how long can it maintain say 500 degrees?
