Love all your videos - very informative to the finest detail which makes it easy to follow. As a child my family lived in Cyprus and we had a massive wood fired oven built by my father.I have a fond memory of my mother lighting it up every Saturday morning and all the surrounding neighbours would come with their dough to use the oven & have their bread baked for the week. They would all sit in a circle & drink tea or coffee & chat while the bread was being baked, lots of stories & laughter. I now live in Australia & you have inspired me to have a wood fired oven built at my home so hopefully my kids can enjoy the same food & experience as I did.Big Thank you.
Thanks for that beautiful bit of history Andrew. You have a great resource for ovens. I would recommend you contact Ben at the Fire Brick Company in Melbourne. They produce really great ovens, and Ben is extremely knowledgeable about his craft. More to come. Clive
As someone who has delved into the world of the Neapolitan pizza and a love for woodfire ovens this video blows me away. I love the production it's like taking the viewer on a Mediterranean journey of food and history. Keep it up.
Great Oven and similar to the one I build, your tips are correct even the comment talking about having a Wife with lots of patience....it took me one year to build it my self along with the authentic Argentinian grill on the side.....every person who loves a good food, good drink and good company, deserves to have an oven like that ! I built a wood burning oven years ago and we love it. I have a medium sized Earth Stone Oven and it can be used for cooking anything. I've even used mine to smoke brisket. The host is so right about this method of cooking, it brings one closer to the food that is being prepared. Building, watching and attending to the fire is always a learning process and the finished dishes are always more complex.
After watching your great videos dozens of times I finally decided (and convinced my wife) to buy an outdoor oven myself. Since we only have a small garden a big brick oven wasn't really possible. So I ordered the Morsø Forno cast iron oven with ceramic tile floor. Really excited trying some of your recepties!
You have great intuition, since getting permission from the wife is the first and most important step towards getting a wood fired oven. I look forward to hearing about your cooking adventures. Clive
You may not read this two years on, but I had a similar journey that lead me to buying a Morso Forno as well...and a year or so later, the Gozney Dome. We're moving to an old, restored farmhouse on a few acres of land and only one of them can come along...the Morso Forno. It's nowhere near as efficient as the Dome which is a cooking powerhouse, but it has more space, it has styles for miles, and it's just a lot more fun to gather around. That said, I have my ultimate sights on a larger wood oven like Clive's here, but the Morso Forno will always have a home. That and the Black Earth Grills Teppan plancha made by a Hutterite community here in North America.
Your videos are better than any TV cooking show I have seen. I'd much rather watch your videos over whats on TV. The videos are so relaxing--I've been watching them over and over again. I'm also researching the market for starting my own woodfired oven channel. I just wanted to say, that as a fellow lover of this style of cooking and all the amazing things it offers, your video is just incredible. @@TheWoodFiredOvenChef thanks, am not sure if i be able to build another clay oven now day at my age But i build one n used it sometimes quite often learning by talking to others, but mine i believe was quite good in energy efficiency i did Not use ANY bricks at all, was on a nice high level with storage for wood under n a frame round it with a poly carbonate roof to keep the rain out did a lot of modifications to it n few mistakes on the way, after the clay died as it was only about 3 inch thick i got a bag of vermiculite for heat insulation n stuck it all over the over n unibond then more clay with straws till i had about 5inches n 6 inches on the roof a skin of rendering kept the elements away but when the rendering cracked n i didn't repair it water got into the clay n it collapsed the door was from an inch n a half garden tile i used to seal round the edges with clay after cooking was over it would keep warm wit the door in position till next day so used to put the next wood in to dry ready for the next time
@@TheWoodFiredOvenChef Thanks for your very inspiring and amazing content showing the wood fire oven. I really enjoy watching the videos about the food and oven theorie. I'm also very curious, where did you actually get your oven from? Did you build the oven by yourself or can you provide a manufacturer company?
Spectacular series Clive! The hours of thought and effort placed into each episode, from the script, to the execution and post-production is evident in each episode that you release. Not to mention the hours you would have put into cultivating your style of cooking and getting to know the intricacies of your oven. I find it particularly amazing that while you create such an amazing and unique experience for your family and fiends, you complement it with a few moments of calmness at the end of the evening while watching the ambers die off. Inspirational stuff mate. What is the soundtrack you've used for your videos... Is it a mandelin? Regards, Hooman from Gold Coast, Australia
Thank you! It is time consuming to make each one, but with responses like this it makes it all worthwhile. I think there's a aspirational component to using the oven, and I try to convey that as much as the cooking. The music is Charango by Mark Thomas Hannah. Unfortunately it's only available for licensing. Thanks for watching. Clive
Clive, thank you for going to the effort of making these wonderful videos. I’ve had one for the last year or so and your tutelage has been invaluable. It is helping us to create wonderful memories with our family and friends. Thank you so much.
Built mine about eight years ago, only use mesquite wood, living in AZ finding fruit woods in harder than east coast. Start my fire early in the day and cook later afternoon, oven keeps heat for days after. Made bread without fire for a test three days later just to see if I could and it worked, it took a while and strangely bread browned throughout, but was very good.
Really, really well done. You don't just cook in a wood fired oven, every meal is an event, while performing art. It's a fabulous dance of creativity and romance and food.
Fabulous content. A pleasure to experience. Beautiful visuals and sounds. Great advice...... Were investing in a wood fired oven🙂. Thank you for sharing your passion. Greetings from South Africa
I have been watching many videos about these ovens...This one pushed me over the edge. I am going to build mine and follow your channel. I dont drink wine however I will enjoy the flower of god as I watch my fire die out. Thank you ...!

Hello, I found your channel while I was doing some research to build my oven. The style of your videos are unique and are loaded with very usefu information. You are very clear to explain and have great ideas for what to prepare in the oven, which I identify as I like to prepare different food on fire. I live in the central part of Cnada so , 5 months of the year we have snow in the ground and very cold; but I have no choice than building the oven outside. Thanks for all the information and your hard work to prepare those videos. Paulo
Whoa...she's beautiful! The oven...I've never seen anything like it. The smells of a wood fire imparted into your food is a veritable feast for the senses.
Fantastic build, excellent knowledge. More people need to use this cooking method to appreciate how the intense heat and burning wood can impact huge flavour on simple dishes.
Great video loved every minute of it.I Grew up around wood ovens begin Greek watching my grandfather and my father over the years lighting up the wood oven. My father build mine out of stone looks great i really appreciate it i love cooking in it ,its a family thing bring us together the Greek style wood oven is a little bit different but works the same we haven't got a chimney. Sometimes i throw few sticks in it and fire it up not to cook but just to sit in the dark only the fire as light with a cold beer and relax just admiring the oven.
Hello Pit Man Thanks for responding to the video. I feel the same way as you about the oven bringing family and friends together. And I agree about that special moment when you can relax and just watch the fire with a glass of your favorite drink (ouzo?). All the best. Clive
Loved Your Passion Chef, It's Has Given Me Motivation. From Early Mankind Has Been Facinated With Fire Which I Saw In The Last Moments You Enjoy As Sipping The Glass Of Wine. Please Keep Pouring More Contents, Would Love To Learn More.
For a very long time I have been learning about wood fired ovens. Your videos are so inspiring that moved me from it would be nice to have on to I got to have one. I now have a premio 100 just like yours. We are still building it but it’s functional already. We love it. Thank you for the work you put into them. I keep watching your videos over and over and hope you do more episodes.
Thanks for watching Jorge. I appreciate your feedback and glad you found them inspiring. Congratulations on your oven. I look forward to hearing all about your cooking experiences with it. Clive
Hello Jorge, thank you for commenting. The tile is called Ceramica Alhambra. If you go to the website, thewoodfiredovenchef.com, and under MY OVEN, there are plans to the oven I designed. Click on the image and it will open a new page and you can save it as a PDF.
Beautifully filmed and edited. I have had a wood fired oven for a few years and using it has grown to be a great passion of mine so I identify with everything you say in this video. Thank you for sharing.
I wanted to offer my gratitude for your outstanding videos. Content, production, clarity and topic matter is greatly appreciated. I believe you have an artistic soul. Thank you!!!
Hello my respected Gentleman, let me congratulate you greatly for the channel that you have, it is by far the best content of the platform. Keep on the good work.
Very nice video. I really appreciate the comment about the best temperatures to cook, and it really inspires to build one. I loved that he wouldn’t dismiss the modern portable ovens. On a technical note, an oven stores energy (enthalpy if you will) rather than heat. Heat is energy being transferred, so storing heat is a nonsense, (because heating and storing are opposites).
You could have been describing me in a lot of that video. I have a 1m Pompeii black oven made in refractory cement like yours that I built in 2010. It gets used constantly, and I absolutely love it for exactly the same reasons as you. Roasted veg is awesome from the oven as is pizza but I'm just getting into cooking meat. Mine has a render over it that is cracking and needs replacing so next year I intend to clear it all off and re-skin it with a heavier insulation ands tile the exterior. Love your presentation style as well. My wife and I also do what you do at the end after everyone has gone - open a nice bottle of wine ( Primitivo usually) and stare at the embers, or toward the end of the summer or autumn add a bit more wood in and also light the fire pit.
Your wife and girls are LUCKY to have you cooking for them! Thanks for the video, great information and I’m asking my husband to build one for me.......and him.....
Hello Marcy. Yes, I feel it's a win win for the whole family. Let me know if you need any more information about my oven's construction. Email me through the website and I will send it to you. Thanks for watching. Clive

In the first world yes, in shit holes like mine a lot of people build one with bricks and mud and works exactly the same way, or if you don't have a yard to build one a lot of pizza places and bakeries make their shit in one of this
Spectacular to see you how you explain the passion between wood fire and food, narrated extremely well, congratulations on all the episodes!!!!! CHEERS!!!!!!!
That pizza really looked good (in the beginning) Years ago, i was getting my lunch at a brand new bakery/deli, one day the owner or chef came out from the back and said to me “come back here” so I followed him back and showed me an oven- similar to this, i can remember it being deeper. Thank you for posting and sharing!!!!!!!!!

I've been grilling and smoking for over a decade now, but am really wanting to move to all wood-fired cooking. I really love your setup and style, and am looking forward to watching more of your content. Please keep it coming!
The most impressive channel. Your knowledge coupled with the exquisite camera work makes for a clear source of information. Thank you for your detailed explanations!
My new way of living is; everything I do is art. This really captures that. How this video was done. The oven. How you speak. The process of cooking. The presentation of the food. The way we enjoy and drink wine even! Etc! All very expresive, beautiful. Inspiring. Thank you. One question, I love the music, any information on that? Would love to add it to my next piece of art!
A very beautiful oven, compliments. May I ask you about the white plaster layer that covers the outside.Being an outdoor oven,is it prone to develop mold easily?Does it need repainting often ? Thanks a lot. Greetings
The outside is finished with an exterior stucco that was troweled on to match the texture of our house. It was then painted with a durable exterior primer, and then a weather resistant latex paint. I repaint it every couple of years.

Hey Clive, We at home all loved watching your cooking videos and hey made or mouths water. Im planning an oven build myself. Our family really likes the style of your oven. So I was wondering if you have the plans for the oven, so I can look at them and make a few modification of my own. Thanks , Rafael
Pardon if you have already answered but what is the size of the dome (interior depth and width) snd oven opening? I ask because I like the space you have to adjust the food. It appears to give you more control of the cooking process. Fantastic videos. Please keep it il.
Hello Dale. The oven is 40"/106cm in diameter. The opening 21"/53cm. Insulation is one of the most important components. A well-built oven with good thermal mass and adequate insulation will be very efficient. In my experience the oven requires less fuel to maintain the temperature, which means a smaller fire, which gives you more surface area to cook with. It also retains the heat very well, which means the morning after I've used the oven (10 to 12 hours later) it can still be anywhere between 500F/260C to 300C/150C, depending on how hot the oven was and how late I used it. So still hot enough to cook without relighting the fire. Let me know if you need any more information. Clive

Absolutely stunning. I really enjoyed your post. I'm thinking about building one myself. May God bless you and yours.
Thank you Andrew, I'm glad you enjoyed it. Clive
Always great to find a use for the retained heat.

Hello, I found your channel while I was doing some research to build my oven. The style of your videos are unique and are loaded with very usefu information. You are very clear to explain and have great ideas for what to prepare in the oven, which I identify as I like to prepare different food on fire.

Wood fired oven basics? How will oven basics get a job now?
Many thanks for sharing your experience. Clive

May I ask you about the white plaster layer that covers the outside.Being an outdoor oven,is it prone to develop mold easily?Does it need repainting often ?

Clive
