Well I was hungry and just ate some mature cheddar with little white dots on the outside, pretty sure it was mould but I was hungry. Melted it over pasta. The thought made me feel sick though so I couldn’t finish it lol.

Most of the time, the small patches of mould on hard cheeses like Cheddar are harmless. But to be extra safe, it might be worth scraping them off next time. They usually don't go very deep into the cheese.

Once you heat it up the mold becomes healthy

Cheddar: If the 5yro brick that I buy will be in the fridge over long, I roll it in rum every so often.

We have a small dark colored pecerino cheese wheel. It was vacuum packed and in the cupboard for a year. Can we eat it?

In the cupboard? What temperatures has it been exposed to?

i had a vacuum sealed gouda grow mouldy...
just to be on the safe side, i didnt use it in food that had any cream. was planning to make a creamy cheese pasta dish.
i sliced of the exterior and shredded the block and i split the portions.
i melted it over some baked potatoes.
if i felt unwell on the first portion, i would have dumped the rest.
the other portions was kept in the freezer. cant do that with high moisture cheese

Thank you for leaving a comment on our video to share your experience. You're spot on about high moisture cheeses. There's no salvaging once the wrong kind of mould settles in

My dad left cheese in the refrigerator to get all mouldy and stuff but it's like regular cheese you put in toasts , sandwiches etc. I think he is thinking of eating it but I don't know if it's safe. Is it safe for him to eat it?

    • @thecheesescientist

If it's sliced processed cheese, it would be safer to discard than eat. Those tend to be high in moisture and any surface mould will spread to the middle. Moreover, those types of cheeses shouldn't be growing any mould at all because of the way they are made.
