- Egg Malai Curry or Egg Malai Masala is a low spice Egg Curry cooked in a creamy gravy without any cream! This unique Egg Curry was first made by Spice Eats and shared on RUclips. An easy to cook recipe that’s tasty as well as healthy.

Ingredients:
Eggs- 4 (boiled, shelled, cut in halves)
Onions - 2 medium, roughly cubed
Green chillies - 2
Ginger-garlic paste - 1 tsp
Cumin (Zeera) powder - 1 tsp
Pepper powder - 1/2 tsp
Garam Masala powder- 1 tsp (Link to our Garam Masala Recipe: • GARAM MASALA RECIPE | ... )
Coriander leaves - 1 bunch ( finely chopped)
Milk - 200 ML
Salt - 1 tsp or to taste
Preparation:
- Boil the eggs & cut into halves
- Put the cubed onions & green chillies into a grinder & blend into a smooth paste
- Fine chop a bunch of coriander leaves
Process :
- In a kadhai, add oil & once medium hot , add the onion-green chilli paste. Lower flame & cook for 2 mins
- Now add the ginger-garlic paste & mix well
- Keep cooking in low flame , stirring often, for around 15 mins till paste changes colour
- Now switch off the flame & add the milk stirring continuously. Mix it well with the Masala
- Switch on the flame & keep in low flame till oil separates
- Put in the cumin powder, pepper powder, garam masala powder & salt . Mix well & cook for a few mins
- Place the egg halves in the gravy, yolk side down to absorb the spices.
- Cover & cook for few mins
- After few mins turn the egg halves yolk side up.
- Add the finely chopped coriander leaves, mix well
- Cook covered for a few mins till oil separates
- Serve, enjoy with rice or roti

I made this today. I substituted precut frozen vegetables for the boiled eggs. I was really unsure about the taste until at the end I added the chopped coriander to the dish. @@aanariAntabri Thank you. I used a frozen mixed vegetables packet. There were green peas, cauliflower, green beans and carrots in it. You can use what you think will go well with the gravy.

boiled milk?
I was starving at 1 am in the morning. Thought I'll do something with eggs and i ended up here and I'm glad I did. Used shallots (mom had some in the refrigerator, peeled 😂 moment of truth when she finds out tomorrow)and yoghurt instead of milk and added some of my own touch of spices on top of your recipe and it turned out to be one of the best meal of my life! No need to say that everyone was in love at first taste with the dish and one of them was in love at first taste with the cook also. I think you understood.. ;(
