Ingredients:
For cleaning-
6 goat trotters (Mutton Paya)
2 heaped tablespoon of salt
2 tablespoon white vinegar
1/2 cup wheat flour
For boiling Paya-
1 tsp pure ghee/oil
2 medium size onion
1 whole garlic
1 tsp turmeric powder
1 tsp salt
1tbsp coriander seeds
1 tbsp fennel seeds
2 big cardamom
4-5 cloves
4-5 green cardamom
1 tsp black pepper
1 stick cinnamom
1 star anise
1 mace
4-5 small bay leaves
for cooking-
1/2 cup mustard oil
onion paste of 2 medium size onion
2 tbsp ginger garlic paste
1 tbsp kashmiri chili powder
1 tsp red chili powder
2 tbsp coriander powder
1/2 tsp turmeric powder
1 tsp fennel seed powder
1 tsp salt
1 cup whisked curd
ginger julienne
green chili
