There are blades that can stay razor sharp, after shopping that wood! Just try a Vanadis 4 Extra or even a good custom ballbearing steel knife! They will chop that wood, and do all the rest of the tasks all day, and they won't need sharpening at all. Extrema Ratios uses soft steel, because they are hard use knife designs and they also chose stainless which makes the steel even softer! I won't say, that they've done a wrong choice there, because I've never seen an Extrema Ration knife fail (break), and that's how they should be, since they are military/survival style knives.
Exactly, well stated! For exampleI own a Linder very high Rockwell hunting knife and so far i haven't even though about touching up the edge LOL. Tis was made with ATS-34 and if followed correctly a proper scientific heat treatment regime, this knife steel can def hold a very sharp edge for a very long time. Yes the high vanadium carbide content in the steel you mention can easily hold such an edge.
It goes from being almost full width to a slightly tapered end. Don't worry, it's 6mm thick and very very strong, belted the daylights out of it for all sorts of extreme tasks in the Ozzy bush/jungle. It's been around the globe with me too several times. You really shouldn’t food prep with a coated knife.
I guess you aren't using PTFE coated pots and pans but it is just a black oxide. Maybe you are concerned with nano particles ingestion?
