I made Rye sourdough bread yesterday......But my favourite lately is a quick method (leaving the dough overnight, and putting straight into the oven 10 hours later) NO KNEADING, but not as flavourful as sourdough !! I shall use your tip about wetting the paper ! Can I give you a tip :- use wet fingers to knead your dough to add more moisture and it is better if you Stretch & fold...stretch and fold ( with wet fingers)...about 4times (and then shape it) instead of adding more flour and folding it in ! It ends up silky and stretchy & sort of wobbly after shaping instead of a solid lump.
